. . . who didn’t know that water - plain, simple tap water - has sodium in it? Where is that in the whole H2O formulation?

I was deleting a duplicate water entry in my food diary when I saw 24 Mg of something. Sure enough, it’s sodium. I live an hour from the ocean; why do they think I’m drinking salt water?

    I would wonder if it is introduced as part of the filtration and purification process, then remains as a byproduct of that action.

    That's not it - sodium (and a handful of other dissolved minerals, mostly calcium and magnesium) are just naturally present in drinking water. If you taste distilled water you'll quickly recognize the difference the minerals make!
