Hi everyone, I'm new here and it's nice to meet everyone. I've been vegetarian all my life and would really appreciate some recipes that are higher in protein or lower in carbs to help add some variety into my diet as I try to lose weight.

I recently tried this vegan recipe for 3 Bean Enchilada Casserole it does have cheese in it but you can omit it if you want. I can get both my picky teens to eat it. My daughter even requests it sometimes now. It's one of our new favorites.

I love the Rainbow Plant Life site for recipes, here are some of her high protein options. if you eat eggs, you could probably add an egg to some of these to up the protein - all of her recipes are vegan.

My latest comfort food obsession is beans and greens. It's super easy to make. I bring it for lunch a lot because it keeps well too. I use collard greens instead of escarole because I like them.
