    it's easy and two ingredients, water and almonds

    I use one cup almonds soaked for 12 hours rinsed completely
    4 cups water
    blend in vitamix for one minute
    strain through nutmilk bag
    transfer to milk bottle (Amazon).

    Simply Deeeeeeeeeeeeeeeeeee licious. Very Creamy.

    Ugh....I haven't had the courage yet to investigate repairing my lap top. It still works....but where the crack is there are all kinds of lines. I am sure one day it won't work so I should be proactive and get it looked at.

    We are taking care of 4 dogs plus our two. My friend Karla is on vacation until Thursday and her dogs are darling. We walked the land bridge yesterday....3 miles and today all dogs are very quiet. The lab's owners come home tomorrow. Then we leave on our trip Friday! Looking forward to getting out of this heat for a week. It will be 105-106 all week before we go. Walked dogs starting before sunrise today.

    My stomach continues to be iffy. I see the surgeon this week. Had a cup of coffee on an empty stomach yesterday before the walk....stupid stupid stupid....wasn't thinking again. Stomach pain for rest of the day...that is the only thing I can think of. Had last of my bean soup yesterday so need to make my favorite vegan minestrone soup today.

    Hi all... busy day and with my misadventures of the weekend never got to the grocery so I ran there on the way home and stocked up on salad stuff. Not going to mess with cooking greens this week. Too much going on.

    Donna, sorry to hear you are still in pain. Hope the surgeon can give you some good advice.

    Gosh, Donna...I never went through any of the stuff you are going through. They just repaired my hernia and only one day I was on liquids. So sorry you are having such a rough time of it.

    Yikes this week so far. It's only Tuesday and I am worn out. I need to get to bed early again tonight.

    I am all about easy to prep and eat this week! This weekend I'm making my own hummus though. I'm using store-bought which has oil so I have to be stingy and I like LOTS of hummus in my wraps. I found Astoria brand flatbread at my local grocery. Good and no oil.

    OMG....best protein shake I have made in ages and my tummy was happy:
    3 0z tofu
    1/2 banana
    2 oz blueberries
    1/2 cup no sugar coconut/almond milk
    vanilla protein powder
    ice

    It was so incredibly yummy.

    Magic - I know right? The hernia was there for a long time with bleeding Cameron's lesions (why I was anemic). I might have developed stomach ulcers. I have not been right since the chowder episode. I see the surgeon Friday a.m. Well actually I feel pretty good today. I had cherries, hummus, rice crackers for lunch. I use to make tofu protein shakes in the 80's with water and fruit. 40 years since I have made one. I have to be incredibly careful with what I eat. Brooks made me instant pot pinto beans. So much better than canned.

    Mihani - I love love homemade hummus. I have a little Cuisinart Mini Prep & Processor that I make hummus with. Today I had artichoke and spinach hummus...wish I had some pine nuts to add but they are so expensive. My favorite is roasted red pepper hummus. Haven't made that one in ages.

    Magic - I love Crunchmaster chips. They have them in the commissary on base.

    JNettie - I admire your dedication to exercise. How is the garden? I agree about the dentist. There are so many ways to make it less traumatic...esp. the numbing process. My favorite dentist used cotton swabs soaked in lidocaine (bitter taste) to provide numbing before using the needle. I need to make a dentist appt.

    Wow, difficult time...but at least the last few days have been better, @bisky. Hope the doctor has good new for you that will help you to continue to heal. Could you ask Brooks to share how he made the pinto beans...that could be something I could do next weekend.

    Sorry, you're having a tough week ALREADY, @Mihani...here's to the rest of the week getting better.

    Do you have an Instant pot? For simple pinto beans he adds a bag of pinto beans (1 lb), Vegetable Better than Bouillon...one - two tablespoons (adds a lot of salt) and 8 cups of water, chopped onion. For the black beans he adds onion and chipotle pepper. Sometimes I mash then with an immersion blender or my mini processor to make "refried beans" but they are not fried and fat free.

    Got up at 5:30 with Brooks to walk dogs and then did the 1.5 mile loop at 7:30...done with dogs for a while. I made them eggs & green beans to add to their food this a.m. SPOILED ROTTEN MUTTS.

    Donna, agreed, I enjoy my homemade hummus more than the store-bought after all this time. Mine is really simple just chickpeas, spicy brown mustard, black pepper, garlic, lemon juice, water or aquafaba as needed to the right consistency. Sometimes I add other spices or a little bit of tahini as well. I should experiment more with adding other things. Spinach and artichokes sound wonderful.

    Thanks for the tips on beans too. I need to overcome my fear of the instant pot. I don't mind making beans on the stove but it does take a long time. I just bought a six pack of dried beans. Navy, pinto, kidney, great northern, black eyed peas. I figured I'd try making them in the instant pot and freezing in 1.5 cup portions like I used to do. The 6th variety is split peas which don't need to be be soaked and cooked ahead. I love split pea soup so I'll think about that this weekend. Work is nuts with the boss back from vacation so I don't know how much time I'll have.

    Yum stuffed peppers, Nanc! I made some once that were a conglomeration of a few recipes that I read. They had brown rice, veggies and black beans and a really flavorful tomato sauce. They were so scrumptious and I could never recreate them! I hate when I do that. LOL

    Today wasn't great for me food-wise. I was so busy. I just ate a couple handfuls of blue corn chips and the little bit of baked beans leftover from yesterday through the day. Finally got around to a Dr. McDougall soup around 3:00. I'm going to have a hummus wrap in a few minutes then chill until bedtime. Didn't get out of the office until almost 6:30.

    Tomorrow will be better!

    Magic - 30 minutes for beans not soaked. We do wash our beans first. You can add whatever spices you like or garlic too. I like cumin.

    Mihani - I too am scared of the Instant pot and was rather upset when Brooks bought it. Now I love it but I make Brooks start it.

    Bought vegan sweet potato curry soup at Whole Foods yesterday. Good but I think I could find a recipe to improve upon it.

    Dogs walked and fed. Off to go swim laps. Tummy is happy lately and hungry.

    I hope you're feeling better today, Mihani.

    My CT scan is this morning. I've never had one before and I am hoping that the confined space doesn't freak me out too much. I should have the results some time next week.

    Guess who I get to hang out with this weekend? Donna! She and Brooks are coming this Sunday and staying the night before continuing to Canada.

    left over stir fry for dinner tonight. we managed to make something instead of another premade salad with tofu last night!

    The CT scan itself was a breeze! I had it confused with an MRI.
    I was in and out of there in under 5 minutes! The test took maybe 1 minute.

    I am feeling a bit better today and made it through the day. I'm going to work from home tomorrow and if I go in Sunday at all it will just be for a short while.

    Also on the agenda tomorrow a big batch of my "famous" lentil soup. Which is only famous among my friends and family, but it is pretty darn good lentil soup. No batch is ever exactly alike but it is always delicious.

    And a big stir-fry. Got bok-choy, mushrooms, green onions, broccoli, cauliflower. Forgot peppers oh well. I am going to make simple baked tofu to top the stir-fry bowls.

    So between that and salads I am set for next week.

    Glad the CT was easy, Carla. I had an MRI years and years ago for my back and it was an "open MRI" machine so you slide in but it's not a tube more like you are a little burger in a huge bun. It was still stressful to me having to hold still and not twitch, but it wasn't as bad as I feared.

    Totally jealous you get to hang out with Donna and Brooks, and that they get to meet Ruby and Radar!

    Sounds like you are enjoying your stuffed peppers, Nanc. I must try making those again soon. Hi to Lulu!

    Today was a bust. Ate some pretzels, a Dr. McDougall soup, went out for a quick drink with friends after work and ate spring rolls. Glad I have a good plan for the coming week so I can stop doing these crazy things. My stress level is pretty much at max right now and I'm struggling with everything not just diet. I have mapped out my day tomorrow with cooking, meals, household chores, work. Need to stick to it and try to get some things under control.

    Doing awesome sticking to the treadmill, Nanc! Yay you!

    I didn't do much of anything today despite my plans. I just needed a mental health day. I've read, napped, watched TV. I'll work from home tomorrow and get laundry done, and make the stir-fry and baked tofu. I have too much food here so I'll wait to make the lentil soup until later in the week.

    This week will be better!
