Awesome Recipe

Hi guys- thought I'd share this with you. I made it last weekend, with modifications for plant-based (didn't fry the tortillas, etc). My husband thought it was a trick when I told him it was vegan- they are THAT good.

Also, instead of making tomatillo salsa from scratch, I picked some up at Whole Foods with the same ingredients. I also just baked some corn in the oven and used that instead of frozen kernals.

    All sounds yummy! I have fallen in love with the China Study cookbook - I stumbled thru so many other cookbooks when I switched to WFPB in Feb of this year and absolutely love the recipes - they are the closest in taste to how I used to eat!
