Chickpea and Black Bean Salad (Balela)
Ingredients
1 (15 ounce) can
Garbanzo Beans (chickpeas, drained)
1 (15 ounce) can Black Beans (drained)
1 can diced tomatoes
½ Onion (chopped)
½ cup Fresh Flat-Leaf Parsley (chopped)
3 tablespoons Extra-Virgin Olive Oil
1 Lemon (juiced)
1 clove Garlic (minced)
1 pinch Salt And Fresh (coarsely ground black pepper to taste)
Mix ingredients together and allow to sit for 15 to 30 minutes
300 calories per 8 oz0 -
Actually, I don’t make any different recipes in the summer than in the winter.0

One of my favorite dishes for any time of the year, but especially for summer is:
1 package of Trader Joe's frozen falafel
1 package of pita bread
1 container of Trader Joe's hummus
1 container of Trader Joe's Cucumber Garlic Dip
Warm pita.
Cut in half.
Stuff half a pita with 3 falafel pieces, a dollop or two of hummus, and a dollop of Cucumber Garlic Dip.
Serve with a salad.
Very light. Very easy. Very quick. Pretty darned inexpensive.0 -
