Coffee, that's awesome you went camping and feeling so well. Yay! Agreed about Fresh Thyme's produce.

Sue, great tips! I tend not to freeze as much as I used to because I would forget about things and have to throw them out when cleaning out the freezer and couldn't recognize anything. :# I will probably need cataract surgery in the next couple years.

You are rocking the fishy cards, Bisky!

Nanc, I'm so glad to see you back with all your cheery emojis. Even if they don't move now.

Busy day but fun. Boss was out most of the day and we got through lots of work with few clients in and out and the phone not so crazy.

Been doing great the past few days. It's like once I got through being sick my good habits bounced right back. Lots of veggies, fruit, beans, whole grains, walking. And best of all sleeping better.

B - oats with blueberries, cinnamon and almond milk yogurt
L - big ol' salad with spring mix, chickpeas, baked sweet potato, grape tomatoes, bragg's, dijon and nooch
    S - banana
D - leftover red rice and steamed rainbow cauliflower

I am trying to use up some of the frozen veggies in the freezer. I just don't like them as much as fresh but they sure are handy. Once I mix them with some rice and add some sauciness they are okay. Tonight I'm going to use a splash of soy sauce and some sriracha. Might have some watermelon for dessert. I left on time today because I was feeling pretty burned out and I want to get to bed earlier tonight.

Mihani, I’ve seen recipes for Mexican Lasagna but never tried it. Yours sounds delicious. Funny how you get more done at work when the boss is out. Typical, maybe. Hope you are feeling better.

Never heard of Good Foods or Fresh Thyme stores. Not near me, but we do have TJ and Whole Foods. Almond chipotle sauce has been added to my list.

Bisky, your cards have a wonderful handcrafted look. And now I see the source for the fish art in your photos.

    Magic, thanks for the welcome!

    Today’s food-agenda:

B whole grain cold cereal, almond milk, 12 grain toast
L brown rice black bean salad w/ tomato, avocado
D leftover tofu scramble w/ mushroom, onion, bell pepper, spinach; side of baby potatoes

Sue, that scramble looks scrumptious! I have heard Nanc mention Sprouts and I think that may be similar to Fresh Thyme.

Nanc, hope July is going better for you.

I am feeling good, energetic and no lingering crud. Man, that sucked almost 3 weeks of being sick. Sleeping so much better which is probably half of feeling better.

B - oats with cinnamon, berries and almond milk yogurt
L - big ol' salad same as yesterday
    D - lentil stew, watermelon

Another early to bed night for me. I want to be completely over all this by the weekend and really catch up at work.

I'm beat, but we're on the downward slope to Saturday. I've been catching up on the work backlog brought on by my gallbladder party. I think I see the light at the end of the tunnel. My daughter works at the same company as me, and our friend (daughter's best friend) was fired on Monday. It's been hard to stay positive at work. This gal is a sweetheart and was on the fast track to moving up in the company. But, I don't think her head has been in the game since she got engaged this last Winter. Still, it was a shocker. Would like some answers as it appears they didn't give her a viable reason.

Mahani, I picked up a couple of the dips at Fresh Thyme. Big fan!

    Anywho --

Breakfast - "omelet" w/ mushrooms, pecan butternut squash muffin
Lunch - big ole taco salad (black beans, etc.), Bing cherries
    Supper - a veggie/hummus wrap (lavash), kiwi

Glad you found the dips and enjoyed, Coffee. That's too bad about your co-worker.

I might have gone to bed too early because I was up at 4 am. Got a mile and a half in on the treadmill with that extra time.

Plan for today is pretty much same as yesterday. Yay for leftovers! I may try to cook something this weekend again, but depends on how much time I spend in the office.

Mile and a half on the treadmill done. Hoping to get through today without losing my mind then I will have all weekend to work on catching up. Meeting up with friends after work for a cocktail.

Plan for today... same breakfast and lunch as I've been having. May just order a salad while I'm out tonight so I don't have to fuss with anything when I get home.

    Yay! It’s Friday!

Yesterday walked dogs 2 miles. Then swam laps followed by stretching yoga class. am starting to feel the benefits of this yoga class. Big salad after then finished laundry and house cleaning for the weekend. Big salad after and I was done. In bed at 8:30.

Starting off with big green smoothie: 2 handfuls spinach, juice 1/2 lemon, cut up ginger, 1/3 banana, few pineapple cubes, vegan vanilla protein powder, ice cubes and 2 cups of water.

I bought a huge birdbath at an estate sale yesterday. Might be the last sale Brooks lets me go to after he and a friend move it. Hope he does not hurt himself because he has a short triathlon this weekend. ivjwmubrgubi.jpeg

    Plan for today:

    B oatmeal, half a bagel
L edamame peanut rice noodle salad, fruit popsicle
D chickpea curry, brown rice, cauli-broccoli mix, summer fruit

Mihani, enjoy time with friends tonight. You deserve some recreational time.

Bisky, interesting how you feel the effects of yoga. There’s an incentive. We have a bird bath that attracted doves that had a nest in bushes alongside our patio. Heard the babies chirping away. They have now moved on to adulthood and left.

Magic, your emojis are clever and fun.

Just retired 5 months ago. Aiming for basic routine of housework and laundry until lunch, then do painting, drawing, and get exercise in afternoon. Feels strange to not have every minute structured and accounted for. But I welcome it.

Bisky, your fish are so cute, I never knew fish had personalities, but it looks like yours do for sure. Beautiful birdbath! I love the weathered aging on it.
Coffee, the original brush cleaning went great, but some has been growing back; I guess it's going to be a never-ending battle, like the weeds in the garden.
Sorry to hear about your friend's firing; it's got to be so frustrating when you're not given a complete and honest answer about why.
Sue, thanks for the tips from FRN. I love that site and have found that the recipes from there are very good. BTW, your scramble looks delicious.
I retired a couple of years ago and still feel the strangeness of the lack of structure. I've been trying to get a routine into place, but with everything going on, that's not coming to fruition yet. On the plus side, not having a FT job means my days can adjust as needed for the surprises that arise. I applied for a PT job and just found out earlier this week that I got it. I have to go to a Board meeting (it's with the local arts and crafts guild) August 3rd to meet the Board and get started. I'm excited!

Sparks - Congratulations on the job. What will you be doing? Oh post pics of some of the Arts and Crafts!

Sue - your schedule sounds good. Love the scramble pic.

Magic - so good you are back. Very cute emoji!

Mihani - what are you cooking this weekend if you have time?

We had rain this week and it is so green with wildflowers blooming. Early morning pics I took today with Obi walking around the base at Fort Sam. We have obedience class later this am.

Cute, Nanc! Are things settling down? How is Miss Lulu?

Bisky, I always feel better when I do yoga consistently too. The consistency is the sticky part.

    Love the new bird bath!

Sue, the edamame peanut rice noodle salad sounds delish. Recipe? I did have fun last night, although I had 2 glasses of wine instead of my usual one, and I was feeling it this morning and wishing I didn't have to go to the office. I used to be able to drink a lot, but my body does not tolerate it well now.

Spring, congrats and wow does that sound like a perfect fit!

I stayed at the office about 6 hours today and hope to put in a full day tomorrow. I wanted to get out and run some errands late afternoon but think I'll put off laundry until tomorrow when I get home.

Stopped at Fresh Thyme and got salad goodies and greens for the week. And more sweet potatoes, non-dairy yogurt, etc. The commercial yogurts aren't ideal, but I like them.

Almost forgot I bought russet potatoes last weekend. I'll get them cooked tonight. I like to slice them lengthwise, sprinkle with no-salt seasoning, and bake. Great to cut up and add to salads, or eat with some steamed veggies, or even as a snack. Way better than blue corn chips, pretzels or crackers (my favorite downfalls).

Thanks for the edamame noodles in the recipes, Sue! I saved that one, and just noticed Spring's chili recipe too. Those both sound really good and simple. I have everything on hand for the edamame so maybe I will make it tonight. Depends on when I get out of the office. I slept in a bit this morning and don't feel any rush to get going.

    Plan for today...
B - ezekiel toast with tahini and sliced tomato
L - Dr. McDougall soup, salad
D - either the edamame noodles or a stir-fry, watermelon

Everyone's tastes are different but I have tried all the Dr. McDougall soup cups over the years, and the only ones I like are the hot and sour ramen and the miso ramen. I always keep a supply at the office for days when I forget my lunch or need a little something extra. They are pretty cheap ordered from the right foods website.

Another health emergency here. :# My arm started swelling up on Friday (the 26th). Went to urgent care and was sent to ER from there. Multiple blood clots in my arm, oddly, from the IV from surgery earlier in the month. Even though they are superficial veins they are treating as if a DVT due to the number of clots.

Bisky, that fountain is GORGEOUS! And the wildflowers, too. It's been lush here in Minnesota due to so much rain. Also more mosquitos because of rain.

You all have been busy making smoothies! I made a peach smoothie last Friday and it was good, but as peachy as I'd have liked. Getting flavorful peaches this far north is hit or miss.

Magic, I'm thinking that since Dr. McDougall had a severe stroke at an early age (18), and lived with some impairment throughout his life, that the stroke that took his life was not unexpected by his family.

Oh geeze Coffee! Glad to hear you got to the ER. How are you feeling otherwise? I had forgotten about Dr. McD's stroke until I was reading some of the articles after he died. He overcame a lot!

Nanc, how are things going at work these days? Did you finish all your organizing at home?

Went out with a friend last night dinner and a cocktail. Had a really good vegan taco. A little oil in the shell of course, but otherwise loaded with beans and veggies. It is good for me to get out and socialize with other people now and then. It's hard to make myself do things sometimes though.

Oh, and a client brought me fresh herbs and veggies from her garden! Huge bunches of basil and parsley, plus some peppers and green beans. I'm going to stop and get some tomatoes to make a light sauce to serve over pasta. Will make good dinners the rest of the week.

    Plan for today...
B - oats with berries and yogurt
L - Dr. McD soup, an apple
D - hopefully the pasta if I get home early enough, otherwise a big ol' salad

Glad you went to ER right away, CHP! I had kinda the same thing happen to me when I was going through Chemo in 1998...the PICC line caused a clot...luckily I knew something was off when I was having pain...scary stuff. Be aware of your body's signals for sure.
    6yt9awaqd2g7.png

Very proud that I prepped my food for this week...having a smoothie for the first time in years, today. Really, just to get the greens in (spinach and broc)...hoping it turns out.

green smoothie (spinach, broccoli, soy milk, pineapple, strawberries, flax meal)
spaghetti loaded with mushrooms and onions
rice and and beans with peppers and onions
    honey crisp apples
    leycaphjwiyt.png

Good morning. Quick note before I go swimming.

Coffee- blood clots in your arm? That is scary. Are they putting you on blood thinners? Take care.
Those Minnesota mosquitoes will love you.

Magic - how was the green smoothie? I can’t have them everyday but I do love them. Great meal planning! I have peppers and onions I need to use today. Think I willl make some rice too.

Mihani - Love bean and veggie tacos! Score on the veggies & herbs. I wonder if you could make a healthy pesto sauce?

Having my jasmine green tea, TJ’s gluten free seed cracker with almond butter and 1/2 banana. Today is a cleanse and get back on the wagon day. My weakness is chocolate and in 3 days I ate a milk chocolate and honey comb candy from TJ’s. Most of it yesterday. I was in a stupor afterwards. Drunk on sugar. Plan today lots of fruit and veggies. I really think at this point it is a strong addiction to chocolate and sweets. I didn’t try eating an apple first or a protein drink….just dove straight into bag of chocolate. I don’t get the disconnect of not eating what I know to be bad for me is. Sigh.

    Great prep work, Nanc.

Bisky, I'm going to make a tomato bake that is reminiscent of one my mom used to make when I was young. Tomatoes, basil, cubed ezekiel bread. I can leave out the oil and use nooch instead of parmesan. Hoping it will be as good as I remember, but nothing ever seems to taste quite like mom used to make, ya know? I might add some zucchini as well since I have one that I need to use.

I worked late and jut got home after stopping to get the tomatoes. Hopefully I can get out of the office earlier tomorrow and be home in time to make it.

Oh, and Bisky, I don't tend to crave sweets but once in a while (like maybe a couple times a year) I'll go through a stage where I want cookies or dark chocolate often. Then I find when I go back to fruit it doesn't taste as sweet for a while until my taste buds get back to normal. Weird how that works.

Well, my smoothie was ok. I think it was the banana in my smoothies that turned me off to them. So, yesterday's was pretty good...I did not add broccoli yesterday...today I will.

    coffee
smoothie: spinach, broc, soy milk, water, frozen pineapple and strawberries, flax meal
beans and rice, peppers and onions and hatch green chili
    spaghetti with mushrooms and onions
    watermelon
    bd6fuckvzpc1.png

^These guys are holding up tens on their score cards...for some reason when I try to capture copy image at that point, it never shows up. Darn it anyway!

Smoothie is not bad… I put in 4 oz of raw broccoli and a big handful of spinach… strawberries and pineapple and about 1/4 frozen medium banana.

I actually had to add in a tablespoon of maple syrup because it was too green. It was way too green so tomorrow I think I might just add more fruit to to hide the taste of the broccoli and spinach. I don’t think I can taste the spinach, but broccoli might’ve made it too green, but I want the broccoli in my body so this is the best way for me to get it in because I’m not that big fan of broccoli anymore. I used to eat it all the time I think I’m sick of it.

Dr Gregor, among others, huge fan of the benefits of broccoli 🥦… powerhouse!

    Bisky, beautiful flower pictures!
My title in the job is Communications and Show Director. Basically I'll be sending out email blasts to membership when needed, doing the monthly newsletter and coordinating all that's needed for the shows. A lot of little parts to all of those, but that's pretty much the gist of the job.
Magic, thank you for the link to the PBN video on Dr. McDougall, I'm going to try to check that out this week.
I like bananas but, for some reason have never really liked any smoothies that had banana in them. Still can't figure out why.
Coffee, so glad you caught the clots and are ok, boy what a scare.
Mihani, the tomato bake sounds yummy. Let me know what you think of the chili if you try it (sorry all, I forgot to post a note here that I had posted the recipe in that thread).
My Mom's visiting, another week and half here, then two weeks at my DS's, then back here for another 2 weeks. Then she heads back home to New Jersey where she lives with my other DS.

Spring, that job sounds like a lot of fun!

Nanc, I am not sure I will ever get tired of broccoli but I tend to cycle through foods sometimes. Lately it's avocado and almond milk that I can't stand.

I like banana in smoothies, but just a few slices of frozen banana.

This week has been a blur. So busy and very stressed. Going to be another weekend in the office.
