    We eat them about once a week. Yummy, and good for you. I wrap whole potatoes in paper towels, and nuke them about 10 min. They can easily be re-warmed by giving them an additional 5 min immediately before serving.

    Interesting. I’ve not included sweet potatoes in my pattern of eating because, the one time I tried to use them, I found they had the density of a rock. I think I dulled my knife trying to cut it! That one experience put them in the “why bother?” food group for me, I’m afraid. 🤷🏻‍♂️

    How did you prepare them? I don't remember every having this issue. I usually bake them for about an hour, and they are fine. I am going to try Al's technique.

    You can buy them already cubed in the frozen food section. Also, if you check the fresh produce area, where they have pre-cut and pre-packaged veggies, you can often find them already cubed.

    Let’s just say I lack the courage and coordination to use a cleaver with any sort of authority. On the plus side, I still have all my original fingers.
