Harvest Festival: How Do You Vary Your Vegetables?

I prefer vegetables to fruit! I can easily overeat my veggies. How are you all doing with getting in your 3 servings a day?

I have not been great this week. Next week I have a meal plan developed that incorporates many more veggies into the main part of my meal as opposed to a side and I think that will help.
Fruit is easier for me.0 -
I eat vegetables with every meal.
I make this slow cooker recipe for my breakfast. It has ground chicken, spinach, artichoke hearts, and mushrooms. I add either quinoa or barley. I change up the veggies too. Sometimes, I use frozen Normandy. Sometimes, I add some ground sausage. It cooks itself then I put it in my bowls and in the fridge. Grab and go.
Lunch is usually chicken with green beans and maybe a potato or a noodle dish.
snack is blueberries with cinnamon
Dinner is fish, a vegetable and kiwi.
I just make sure that I get the right servings to complete each meal. I may top the vegetables with some cheese or some raspberry salad dressing. Sometimes, I just sprinkle some herbs. It really just depends on the mood. I love fruits and veggies.
I also snack on cucumbers or celery. I bake the celery, so it is easier on my teeth. My problem is that I can overeat veggies.1 -
I too can eat a zilllion veggies but fruit is so hard to get down without puking. I keep trying things but the only things that stay down are bananas, raspberries. I eat tomatoes but I have to watch the acid intake as my ulcer is working overtime with the move.0

Tonight I am making a burger (I LOVE burgers!) Adding mushrooms, onions and garlic. I'll sautte it and make a LOT!! Tonight this combo will be 2 veggies worth and probably more!!! Earlier I did had homemade chili!! YUMMY!! You can make it healthy and very low sodium when you make your sauce also. Use the bean of your choice, it can be quite healthy. Breakfast I had V8 ( @Catwmncat) told me about V8 pomegrante and blueberry. Be sure to shake it very well!! It has in one 8 oz glass 1 fruit and 1 veggie. I am going to be over today in this! Before the fruit HH (Healthy Habit) in week 3 I was ZERO!
This week intentional eating, usually I am a "What do I feel like eating" person. Planning it the night before is more of a challenge, in the past I did not enjoy this. Oh man! I am changing!! Today I am enjoying this and finding, as long as I do not let myself get hungry, it's easier to stick to a plan!
Tomorrow I am going out to eat. This is the normal. I'm hopping off the computer for a bit as I am calling a friend. Its always the 2 of us deciding on where to go. The rest (2 to 4 others) are okay with our choices. I'll know before I go to bed what I'll have tomorrow, and it will not be a "What do I feel like." Instead it'll be planned around having veggies in it/with it!2 -
