Thought I would start off our new year with some greens. 🥬
💚 Started the day with a watercress, kale, purple kale shake. Roasting some Brussels Sprouts 🌱 for later.

We had the first meal from the 16 servings of Crockpot Braised Chicken, Caramelized Onions & Yellow & Red Peppers, with Butter Beans & Brazil Nuts that I made a few days ago, tonight, & also Raw Foundation Water Vera & a Banana, after.
The recipe I saved seems to be gone, tho, so I have to re-enter it, to log it. Tmw. So tired today!
Ordered a few more boxes/selections of Raw Generation today, while they're still on sale . (I think it ends tonight.) Two 60-bottle selections on their website. A Build-A-Box of green juicers and sippers, that are new flavors. A Build-A-Box of protein selections, and a couple of the other juices that were also new. And a smaller box, on Amazon, that was just Chocolate Protein, & Vanilla Protein, Meal Replacements.
Loving these things, looking forward both to trying new flavors, and trying my hand at reproducing them, at home.1 -
To begin this new year, I got whole wheat bagels with nondairy cream cheese for breakfast this week. I have prepped awesome salads for this week as well. I also have frozen vegetables to steam and/or make stir fry with for dinner. My goal is to eat veggies during the week and eat (some) meat on the weekend only.
I’ve decided to do a Dry January to try and get myself on a healthier diet.
I wish everyone well in their efforts to make positive choices!3 -

My today will be a copy/paste of yesterday, basically, so I'll be getting in some spinach and tomatoes, red & yellow peppers, onions, butter beans, brazil nuts, a banana (lol a day of Bs), and a Raw Fountain or Raw Generation juice (not sure what today's is, it's defrosting in the fridge, tho).
I'm big on meals prepared ahead of time, too, can you tell? lol ~1 -

Scrambled egg with chopped mini pepper & mozzarella cheese, garlic beer bread i made (I serving), turkey sausage
Late Lunch
Campbell’s Old Bay Seasoned New England Clam Chowder, serving of beer bread rather than crackers, small salad of lettuce, bell pepper, cucumber (about a cup worth ).
Not amazing but better than last few days. Tomatoes are a trigger food for GI/esophagus issues & so skipping tomatoes today as rotating leftover New Year’s Eve lasagna (and week of pizza, lasagna, tomato on salads).
December seemed to be a month of triggers building up/overlapping:
too much chocolate, a little wine, coffee-too much? Probably, too much tomatoes/sauce, and definitely too much stress-so this January I am trying to reign a lot of those triggers back in because I don’t need the stress and I don’t need the anxiety of wondering if it’s acid reflux/GI stuff vs a heart attack.
Yes, I’ve done proactive vascular/heart testing but my youngest sister has had 2 heart attacks in a year which has really ramped up my awareness/worries about health & I am really trying to do 72-78% of time Mediterranean vs red meat diet so 5-5.5 days of veggies, seafood, or chicken to 1-1.5 days where at least 1 meal has red meat in it.
So definitely trying to embrace the veggies more with some high fiber/protein grains (but also trying to limit bread/white flour products).2 -
I went out to an early dinner yesterday with my husband to a seafood restaurant. After eating clean this last week, eating fried fish really gave me a stomach ache quickly. It was unpleasant enough that I will make a greater effort to choose healthy meats on the weekends. On a positive note, we stuck to iced tea instead of having drinks.
I am starting my day with a whole wheat bagel with dairy free cream cheese and a cup of coffee with oat milk creamer. (I struggle with EOE due to dairy).
I have salads that I prepped that I will eat for lunch. I am not sure where the day will go, but regardless, I am going to make healthy food choices!2 -

avo toast on Dave's Killer, with olive-oil fried egg & heirloom tomato, and greens with diced dates, walnuts, & a drizzle of coconut vinegar ~
Thursday, and Friday,
crockpot braised chicken (shredded after cooking) & caramelized veggies (red & yellow peppers, onions), with butter beans & chopped brazil nuts. 2z cooked whole grain elbows was added after pic was taken, it was too filling, so I split it in half & had it both nights ~
Thursday, and Friday
Raw Fountain Water Vera juice (had Citrus Kick on Friday, but no pic), also a banana on Thursday (no pic again); roasted plaintain on Friday ~
Friday,
roasted plantain - scored drizzled with olive oil, seasoned with organic black pepper & sea salt; then back in the oven for another 5 mins to melt cheese (4 state cheddar, WI, CA, VT, NY) ~

That lasagna(actually, two large pans!) just came out of the oven. It includes red lentils, a pound of cherry tomatoes I needed to use up, a pound of carrots, a giant zuchinni, two large sweet onions and two heads of garlic. In addition to seasoned ground chicken, pasta sauce, cheese, eggs, pasta.
I went goggle eyed when I saw it was 9700 calories. But it’s meal prep for many, many meals. 😚
Can’t wait to dive in. Waiting for the rolls to bake. Tried the two-ingredient yogurt/flour recipe as a lark.

Not so green but made a Blue Zone recipe - Buddha’s Delight - noodles with mushrooms, jujubes, snow peas, carrots, napa cabbage, bamboo, water chestnuts and tofu. Couldn’t find lilly buds or ginko nuts.

Just back from a movie date with friends. Packed green bean chips, and bottled water, to take with, instead of buying popcorn & soda, at the theater. So proud of myself ... and then we all went to Five Guys afterwards 🤐. I'd never actually been before - the burgers and fries really are kind of great. Haven't logged it yet. I did get the small of each. (And a small shake -shhhh don't tell!) Only ate half, saved the rest for tmw lunch. But, it is what it is 🤷♀️. I did get the Little Burger with all the toppings, so got some veggies in ;-).
We saw the Bob Dylan movie. It was kind of great.0 -
The lasagna was delicious. It made 24 225gr (8oz) servings, and they came to well under 400 calories apiece. So I’ve got ten bags tucked away in the freezer, and a bowl in the fridge for a quick dinner later this week.
You couldn’t even tell the red lentils were in it, but they gave it a wonderful, creamy “mouth feel”.
I was smacking myself upside the head for forgetting to add spinach, but in all honesty, the green might have been a little ick, and it was full of veggies as it was.
The self rising flour/yogurt rolls I’ve seen touted so much, YUCK. Mine looked nothing like the photos on various websites, didn’t rise at all, were somehow gummy and only slightly fluffy. Will try one more time, using another recipe site for different instructions. Surely they can’t be that popular online and be that awful?????
@NouveauRee i don’t know where you’re from, but down here in the Deep South of the USA, jujubes are very chewy fruit and licorice flavored candies. Some are round, I remember getting the ones sorta shaped like Easter island statues as a kid. I have no idea what a jujube vegetable would be, and am SURE your lovely dish didn’t call for jujubes as I know them. The very thought….🤢

lol definitely didn’t use American jujubes😜 used Chinese jujubes. They are a fruit that’s usually used dried. Also called a Chinese red date. Supposed to be high in antioxidant and helps improve inflammation, anxiety and sleep.

🪴 Had some green juice today. I’ve succeeded in getting my office to order some healthier eats! They bought me a vitamix for Christmas 😃 and we order some fresh food and blitz it. We are all on dry January together. 🏋🏼♀️

Tomorrow is 16 (+1) bean soup. Beans are soaking right now. I’ve already shredded several pounds of chicken and diced a couple pounds of smoked pork to go in it.
I cook it in tomato juice, and add sautéed onion, carrots, celery, a large can of diced tomatoes and the ham bone left over from the holidays, and let it simmer several hours.
This time I’m adding a bag of corn because we discovered last time that if we add some spicy BBQ sauce right before serving, it tastes just like the Brunswick Stew a much-missed bbq restaurant used to serve here. Their’s had corn.
As a kid, that was the ultimate gourmet meal. A bowl of Old Hickory House’s Brunswick Stew, with saltines crumbled on top.
Perfect for this cold weather that moved in! It’s crazy to see “7-9 inches of snow” in the forecast for my southern town. I’m really looking forward to it. It’s such a treat, especially now that I’m not in the car insurance business anymore. 😂😂😂
We do NOT know how to act when it snows. First thing that happens is every idiot with a 4x4 has to play the fool.2 -
