Low Fat and Low Carb?

Hi there! I’m a total newbie and looking for some help/suggestions.

In 2022, after having my gallbladder removed, I developed acute pancreatitis and had to have part of it removed. After yearly stints in the hospital afterwards, I had more surgery to remove an orphan piece of pancreas (along with my spleen). This apparently was the tipping point and now I’ve been diagnosed with T2.

I spoke with a dietician but am still struggling (and a little overwhelmed). I already avoid anything high fat due to pain/digestive issues after the initial surgery, but now I’m supposed to watch my carb intake. Not sure what food options that leaves me with and/or how stringent I need to be.

They just put me on metformin but told me, with that, I shouldn’t need to use a monitor. The second surgery and diagnosis all just happened in January so I’m going to see about getting into an education class but until then, I’m looking to see if anyone has any ideas or has gone through something similar?

Thanks!

Sounds to me as if you are going to have to be picky with veggies and eat lean meats.

Starchy carbs are probably off the menu. Leafy greens and things like broccoli are pretty low in net carbs.

Did they suggest a target for carbs and fats per meal? That would help a lot with meal planning and the Food Diary would be really helpful tracking all that.

I am just garden variety T2, and don't have any experience with anything like what you are going through.

You will get this figured out.

I have ibs. I used to get debilitating stomach cramps. I had my gallbladder removed because the doctor said I wouldn't be able to tell the difference in the pain and I had gallstones. I do eat leaner meats. But I also found that a higher fiber diet lessens the effect that fat has on my digestive system. If you are not accustomed to fiber I would only increase the amount a gram or two each day for a week to give your body time to adjust.
