Losing Weight doesn't mean eating Tofu, necessarily

Hey Everyone,
If you are like me and you're on a weight-loss journey that doesn't mean you have to abandon the foods you love and eat tofu as a protein substitute with every meal. If you like tofu, more power to you. If you're like me and don't like the flavor or texture of tofu, then join the revolution.
When I started my journey I had several health issues that forced me to eliminate several of my favorite foods from my diet. For instance, I have high blood pressure, so I had to reduce the amount of sodium in my daily diet. I was also more than 140 pounds over-weight which meant a reduced calorie diet. My weight problem contributed to me developing uncontrolled diabetes, which means I have to adjust the foods I eat to foods low on the glycemic index in order to lower and stabilize my blood sugar.
If you have any of these conditions, you know what I'm writing about here. Changing what I ate was literally a matter of life or death. For me, that didn't include Tofu, quinoa, or rice cakes. For me it meant giving up bread, which is full of sugar, starch, gluten, carbs, sodium, and other stuff I don't need. It also meant giving up soda and alcohol. The beer, not such a big deal, but giving up my caffeine and sugar in soda was a paradigm shift for me. That really hurt.
The BIGGEST change for me was the shift I made to lower my cholesterol, which was completely out of control. Moving from meat to vegetables was a game changer. It was also cheaper. I replaced red meat with turkey and chicken. I replaced pork with several different types of fish and other seafood, which, by the way, is actually cheaper than pork. Here was where the big switch comes in. I reduced my portion of protein from 8-12 ounces per meal to 4-6 ounces and replaced that with VEGETABLES. Now my plate is 60-70% vegetables and 30-40% protein and not an ounce of Tofu!
I was losing 2-3 pounds per week WITHOUT exercise. When I added a fitness routine to my new food regimen my weight loss jumped to 4 pounds almost every week. In 16 weeks I've lost 40 pounds and kept it off. My blood pressure in lower, my A1C is almost in the normal range, and I've taken 5 inches off my waist.
I guess what I'm saying is, if I can do it, you can do it.
