    ORANGE COUSCOUS PILAF
    Found this in Dr. Neal Barnards book Reversing Diabetes

    2 cups low sodium vegetarian broth. (I suggest just making your own, boiling water with whatever veggies you wish. It's cheaper and much healthier)

    1 cup couscous (or quinoa for gluten free)

    1 cup grated carrots

    2 large oranges, peeled and cut into small chunks

    4 teaspoons grated orange peel

    1/4 ground cinnamon
