Low carb poutine - tweaks/thoughts...

Oh so I don't know why, but I have been obsessing over poutine. Not that I allowed myself to have it very often when I wasn't following a keto plan. But now 2 of the 3 "forbidden" foods are a go, cheese and gravy. I've just been trying to find a replacement for the fries.
Here's what I've come up with so far, and to further complicate it I'm Veggie-Keto
Low Carb Veggie Gravy
1 tbsp Coconut flour 1.5g net carb
1 tbsp butter
1 tsp Better than Bouillon Vegetable 1 net carb
1 cup water
Squeaky Cheese
Baked Asparagus (6 stalks) 1.8 net carb
Or
Daikon Radish (1 cup) 2 net carbs
4.3-4.5 total net carbs
Do you think the flavour profiles would work well or is there something else that might be better?

If I were you I think I'd get a whole bunch of different veggies cook them up with it and do a sampling for future reference. sounds like you're getting close to asparagus with hollandaise there

Ok. So tonight was test night...thoughts?
Gravy - with the coconut flour there was certainly a coconut flavour I should have been expecting but didn't. The roué did not cook down as my previous flour gravies have nor did the gravy thicken. I left it to reduce and achieved a measure of thickness that way. Recommendation - Seasoning, otherwise it was pretty good.
Cheese curds - what can I say? Cheese curds are awesome. Recommendation - remember, they are very salty on their own, season other components accordingly.
Cauliflower Poppers - I didn't achieve any crispiness after an hour at 400 degrees. While the flavour was lovely and I will bake my cauliflower that way again, I really was looking for the crispy after-bite. Recommendation - continue testing baked vegetables until I find the right crispness.
What torture...I must try poutine again and again until I get it right...(please don't let it happen too quick).

458 calories
10g carbs
6g fibre
39g fat

I only baked the Poppers at 400. I will try a broil next time. Having problems finding daikon at any of our grocery stores here :-( Going to try baked green beans next. :-P0

I've been hooked on the cauIliflower fries all week. we went thru a lot of cauliflower I manage a little burnt crisp to them but they're still pretty soggy. not like real fries but really nice flavor using olive oil.0
