I found this two easy recipes a few months ago and I've made them several times! There both easy but one of the recipes only requires 2 ingredients!

*BLUEBERRY PROTEIN PANCAKES*

INGREDIENTS
- 1 egg
- 1 scoop of Vanilla Protein Powder
- 1 tbsp. ground flax seed
- 1 ripened banana (mashed up)
- 1/2 cup fresh blueberries
- 1/2 tbsp. vanilla almond milk
- 2 strawberries

DIRECTIONS
-Mix all ingredients in a bowl
- Spray pan with some PAM or EVO on low to medium heat
- Scoop some of the batter on there, flip over, and done!
You can top them with the strawberries

250-300 calories, 27 grams protein

*100% NATURAL PANCAKES*

INGREDIENTS
- 1 Ripe Banana
- 2 Whole Eggs

DIRECTIONS
-Just mix in a bowl and make sure the banana is all mashed.
-Then spray pan with some PAN or EVO on low to medium heat
- Scoop batter on pan, give it about 20-30 seconds then flip and your done

248 calories, 14 grams protein, 28 grams carbs, 11 grams fat, 15 grams sugar, 3 grams fiber

    6 oz 0% plain greek yogurt
    3/8 cup flour
    1 tsp baking soda
    3 or 4 tbsp of egg whites

    273 calories, 29 grams of protein.

    Just mix it all together! The batter is really thick so you have to spread it out on the pan some to make bigger pancakes. But they are delicious! Healthy but so so satisfying. I like to make a smaller batch and then make some egg whites with salsa for breakfast for a nice healthy egg and pancake breakfast that keeps me full for hours!

    Applesauce Pancakes

    Serves 10

    1 cup All purpose flour
    1 teaspoon baking soda
    1/8 teaspoon salt
    2 tablespoons wheat germ
    1 cup nonfat buttermilk**
    1/4 cup unsweetened applesauce
    2 teaspoons vegetable oil
    1 large egg, lightly beaten
    Cooking Spray
    Sugar-free Maple or fruit topping of your choice

    Combine first 4 ingredients in a medium bowl; make a well in center of mixture. Combine buttermilk and next 3 ingredients. Add buttermilk mixture to dry ingredients, stirring just until dry ingredients are moistened.

    Heat a nonstick griddle or nonstick skillet coated with cooking spray over medium heat. For each pancake, pour 1/4 cup batter onto hot griddle, spreading to a 5-inch circle. Cook pancakes until tops are covered with bubbles and edges look cooked; turn pancakes, and cook other side.

    Serve with maple syrup and fresh fruit, if desired (syrup and fruit not included in analysis).

    Per pancake (not including syrup or fruit):
    Calories: 74
    Fat: 1.8g
    Protein: 3g
    Carbs: 11.5g

    **You can sub the buttermilk if you don't have any by taking 1 tablespoon of apple cider vinegar and putting that into a measuring cup. Add enough skim milk to make one cup of liquid. Stir and let sit for 5 minutes.

    I tried the blueberry pancakes on the weekend and I couldn't get them to stick together! Tasted good, but ended up like scrambled pancakes. I make a similar recipe with just banana and not the other fruit and it works out fine. I think the extra fruit prevents them holding together.

    The most basic pancake recipe you'll find.

    1 30g scoop of protein (I use unflavoured Casein)
    1/3 cup self raising flour
    1 egg
    Approx 1/2 cup skim milk
    a pinch of baking powder (optional)

    Mix together and fry like regular pancakes - simple!

    Macros are pretty good too, mine came out at: 36P/30C/7F. Solid.
