+Pizza Soup+ ( lower-carbs)
Makes 1-2 servings

-4 Black Olives sliced
-Tbsp Chopped onion ( you can add bell peppers too)
-2 Mushrooms sliced
-1/2 Cup Shredded Colby & Monterey Jack Cheese
-2 slices uncured bacon ( you can use pepperoni or Italian sausage)
-1/4 Cup Unsalted Tomato sauce
-3 Tbsp Heavy Cream
-2 Cups Chicken Broth
-garlic powder, sage, pepper, oregano etc

1) Cook bacon, saute onions & mushrooms.
2) Crumble bacon add to mushrooms, onions & olives. Set aside.
3) Bring chicken broth & tomato sauce to a light boil
4) Reduce heat Add spices & bacon olive mixture
5) Add cream & stir. Then add cheese until it is completely melted.
6) Serve :)

Makes 6, 1 cup servings

-Chicken Broth, 6 cup
-Cabbage 1 cup, chopped
-Anchovy Paste, 0.08 Tbsp
-Coconut Milk, 117.6 ml
-Cooked chicken thigh 4 oz

1) Shred chicken while broth & coconut milk simmer
2) Add anchovy paste to dissolve
3) Add cabbage and cook to desired tenderness

Add soy sauce & sesame oil for garnish ( not accounted for)

    My fav LC Broccoli and Cheese Soup Recipe. SOOOOO YUMMY!! My whole family begs me to make this often!! Makes 8 large servings.

    Frozen Broccoli, 32 oz. bag
    Kraft - Philadelphia 1/3 Less Fat Cream Cheese , 1 container
    Shredded Sharp Cheddar, 1 container (2 cups ea.)
    Swanson - 99% Fat Free Chicken Broth, 3 container (2 cups ea.)
    Butter - Salted, 2 tbsp
    Heavy Whipping Cream, 1 cup
    1 chopped onion
    1 tsp garlic powder
    1/2 tsp onion powder
    1 tsp pepper
    1 tsp salt
    Red pepper flakes (to your liking)

    Boil broccoli and onion until very soft in chicken stock
    Do not drain. As it gets soft mash it with a potato masher to make the soup thicker
    I let it boil probably half an hour total to let it thicken a little
    Add all spices
    In the microwave:
    Combine the cream cheese, cheddar, butter and heavy whipping cream
    Microwave in 1:30 min intervals, stirring in between, until totally melted together
    Pour into soup, stir until distributed
    I like to turn the heat to med-low and let that simmer for about 20 min to thicken a little more.
    Serve!!!

    Chicken Broccoli Soup

    Ingredients
    8 Chicken Thighs
    4 Slices Bacon
    780 g Broccoli
    12 oz Cheddar Cheese, Shredded
    1.5 cups Heavy Cream
    1 Can Chicken Broth
    To Taste Salt, pepper, garlic powder and onion powder
    Instructions
    Preheat oven to 350 degrees
    Place chicken thighs in pan with a lid, season, and add water
    Cook chicken for 2 hours
    While chicken is cooking, fry 4 slices bacon
    Fry Broccoli in bacon grease, break up broccoli as much as possible with spatula
    When chicken is done and cooled, hand pull and put into pot
    Add broccoli and bacon, mix over medium heat
    Add cheese, heavy cream and broth
    Heat until thickened

    This really makes more of a casserole in my opinion!! Add more chicken broth to make a soup or eat as is for more of a casserole dish!

    Just got a new Blendtec and made this for the day!
    Creamed Spinach, Mushroom and Chicken Soup (2 Servings-2 cups each)

    2 cups Coconut Milk
    1/4 cup Yogurt
    2 cups Fresh Spinach
    1 cup Raw Crimini Mushrooms
    6 oz. Cooked, Chopped Chicken Breasts
    1/2 cup Parmesan Cheese
    Nutmeg
    Salt
    Pepper
    21 Seasonings

    Combine all ingredients in a high power blender and blend until smooth. Heat on stove or in microwave until just hot. Salt and pepper to taste. Garnish with extra parmesan.
