As a Doritos addict (and all things processed neon-cheese junk), I must try these: http://yourlighterside.com/2009/05/crunch-time-doritos-style-chips-makes-mouths-munchier-2/

I made this (zucchini version) this weekend.
I squeezed out as much water as I could, baked them, but then ended up putting them in the dehydrator for a few hours to get that extra bit of crunch.
Oh myyyyyyyyyyy......they are soooooo good!
Edited to add: I also dropped my oven temp down to 400 degrees since the edges were browning way too fast.0 -

Hmmm....
How about the cheese crisps with this dorito seasoning mix:
Stolen from
http://www.veganricha.com/2012/02/penne-and-broccoli-in-dorito-cream.html
Doritos Spice Mix: Gluten-free
1-1.5 Tablespoon nutritional Yeast
2 teaspoons dried onion flakes or 1 teaspoon onion powder
1/2 to 1 teaspoon garlic powder
1/2 teaspoon cayenne
1+ teaspoons paprika(to taste/color)
a generous pinch of salt
a generous pinch Rock salt/Kala namak(optional, if using lemon juice for wet uses. Not optional for dry spice since it does help add the sour. you can try lemon zest instead)
You can add Daiya cheddar, yellow mustard powder, for cheddar, lemon zest, dried parsley for ranch, red chili/black pepper for the spicy variations.0 -
Thanks for that spice mix recipe.
I didnt have popcorn seasoning on hand, so I had to wing it. I think this blend would bring me a lot closer than the mix I threw together.0
