Spaghetti Squash

I made this last night, and it was great! I will be making this dish more often.

1 spaghetti squash
1 jar of tomato/pasta sauce (I pick based on if I can read the ingredients or not)
2-3 handfuls of fresh spinach
1 lb ground turkey
Some oregano, salt, and pepper
Some Parmesan cheese

Preheat oven to 350.
Cut that baby sized spaghetti squash in half. Scrape out the the guts and seeds. Place each half cut side down on a rimmed cookie sheet that has some water in it. Bake for an hour.
30 mins in: Brown turkey, pour in the pasta sauce, toss in spinach, season with oregano, salt, and pepper, and cover with a lid. Stir the mixture occasionally.
1 hr in: Take out the squash. Flip each side on its back. THE BEST PART: drag a fork through the squash and watch the noodles form! Spoon in the sauce and mix it in with the noodles. Top with Parmesan and place in the oven for 5-10 minutes to broil... if you want.

I might scoop the squash noodles out into a bowl next time. The skin of the squash got kind of soft, which is nice but not very pretty.
