Hummus

One 15-ounce can (425 grams) chickpeas, also called garbanzo beans
1/4 cup (59 ml) fresh lemon juice, about 1 large lemon
1/4 cup (59 ml) tahini or peanutbutter
3 cloves of minced galrlic
1 tablespoon
1 teaspoon ground cumin
2 to 3 tablespoons water


Mix all ingredients with a hand wand mixer or food processor.

Serve with veggies or whole wheat pitas

    Sheppard's Pie with Mashed Cauliflower

    3 chopped carrots

    1 chopped onion

    1 pkg of ground beef

    1can tomato paste

    Worcester sauce 1-2 tbsp

    1 cup of beef broth

    1 cauliflower

    2 tbsp olive oil

    shredded cheese to top optional
    I put it on for my family but left a square without for me.


    saute chopped onion and carrot 6 min

    cook beef and drain then add to carrot and onion

    stir in tomato paste and beef broth simmer 10 min

    steam cauliflower and mash in blender with 2 tbsp olive oil

    put meat in a casserole dish

    top with mash cauliflower

    add cheese on top and bake 450 15 min yummy.
