I eat vegetarian most of the time. I would love to get some recipes that aren't to high in fat.

One favorite of mine is a West African Stew. Here's a link to the basic recipe. I always fiddle with it, depending on what I have on hand - often adding black beans to the mix. You can really adjust the spiciness according to your tastes. The peanut base to the sauce is so rich and lovely. You can substitute other nut butters (almond or cashew come to mind).
