Low carb and vegetarian?

Hi,

I've been on a low carb diet for about 2 months now but as I'm vegetarian I struggle with what I can eat. Any ideas what I can have? Any help is much appreciated.

    im more pesci and moving into a meat free lifestyle....but i use protein powders, boca meatless burgers, peanut butter and eggs to get my protein in. if you do fish, shrimp and tuna are good sources or protein. as well.
    so breakfast may be 2 boca burgers and eggs with cheese or boiled eggs
    snack a protein smoothie,
    lunch more burgers with a veg or shrimp n broccoli
    snack - another shake with a 100 calorie pack of almonds, or dannon greek yogurt with 2x protein and a few spoons of PB
    Dinner - egg salad or fish or chili or taco or zucchini pasta made with meatless crumbles
    snack - another shake, PB, or yogurt.

    Vega makes some awesome nutritional shakes and products. Nuts, eggs, dairy etc. are always good sources of low carb eats. If I may be so bold, be careful with soy consumption.

    I second the suggestion to check out ohsheglows.com. Her ideas are fantastic.

    My favourite low carb vegetarian/vegan lunch is zoodle pasta or spaghetti squash with pasta sauce and added veggies (like bell peppers, mushrooms, spinach, etc). You can easily make zoodles by Julienne-ing a zucchini. Spaghetti squash takes a bit longer as you have to bake it and scrape out the insides with a fork in order to get your noodle-replacement. Mixing up the pasta sauces, spices, and mix-ins keeps you from getting too bored.
