Vegetarian Gravy

A friend of mine brought this to a Thanksgiving or Christmas dinner a few years ago. Her recipe was pretty much like this one from food.com and was pretty tasty. I have looked at a bunch and they all tend to follow this formula.
Ingredients:
3 tablespoons margarine
2 tablespoons of finely chopped onions
2 minced garlic cloves
3 tablespoons flour
2 tablespoons soy sauce (I would use a low sodium soy sauce)
1 cup water
salt and pepper to taste
Instructions:
Put margarine in a pot and saute onions and garlic over med-high heat
Reduce heat to medium once garlic and onions have become golden brown
Make a roux by gradually adding flour, while constantly stirring to prevent lumps
Continue to stir while adding the soy sauce and water
Add salt and pepper
Continue to stir until gravy has reached desired thickness, remove from heat and you're done!
