Amazing Low Carb Chocolate Chip Cookies

Amazing Low Carb Chocolate Chip Cookies
Servings: 24-32 cookies, depending on cookie size

Ingredients

2 1/2 cup almond flour
1/4 tsp salt
1/4 tsp baking soda
1 cup sweetener (recommended: Z sweet ground in a coffee grinder, or use powdered Z sweet)
10 tbsp butter (1 stick plus 2 tbsp), melted then cooled
1 egg
1 tsp vanilla extract
3 tbsp sugar free maple syrup (recommended: Hungry Jack, butter flavored sugar free syrup)
1 cup Nevada Manna Chocolate Chips, or Lily's Chocolate Dark Chocolate Chips, or dark chocolate chopped into chunks
1/4 cup unsweetened shredded coconut (not flaked)

Preheat oven to 350.
Mix dry ingredients - almond flour, salt, baking soda, sweetener - in a large bowl.
Whisk butter, egg, vanilla, maple syrup in a med bowl.
Add wet to the dry, and mix until combined.
Stir in coconut and chocolate.
The batter will be fairly soft, but will get firmer as it sits.
Line baking sheet with parchment paper. Drop dough by rounded teaspoon onto baking sheet.
Bake for 10-14 minutes, until edges of cookies start to brown.
Let cool before transferring off pan. These are more delicate than a traditional cookie, and when hot, will easily fall apart.

Notes:
The first time I made these, I got 32 cookies. The next time 24. Just make sure they are sized evenly. With 32 cookies, these came out to 1 net carb per cookie and 106 calories per cookie (fiber and sugar alcohols subtracted, using Z Sweet and Nevada Manna chips).

I am a big fan of Z Sweet, which is a blend with erythritol and stevia. The flavor, in my opinion, does not have an aftertaste, like so many other sweeteners. I do subtract the sugar alcohol from the carb content, and only count net carbs. You need to make the right choice for you. Zsweet has a tendency to be grittier in some recipes. I find that if you grind the Zsweet, it eliminates that issue.

For the sugar free syrup, look for a syrup that does not contain malitol.

For chocolate chips, I've only used the Nevada Manna chips. I've looked for these this week, and all online stores currently show out of stock until next summer? Lily's chocolate has just come out with chocolate chips, which I'm very excited about. These are sweetened with stevia, erythritol, and inulin. I found these online at Vitacost -

There are sugar free chocolate chips at some stores. Make sure that they have "good" ingredients that fit your plan - avoid malitol. In my opinion, this is an terrible sugar alcohol. it has a high glycemic index, and causes gastric issues for most.

    I wanted to give a quick update. The husband and I found an even better LC Chocolate Chip Cookie recipe over at All Day I Dream About Food.

    Pretty much the same ingredients, but the ratios of each are a little different. She does call for molasses in her recipe (optional) - we still use the sugar free pancake syrup here. Texture is a little more like a traditional chocolate chip cookie (vs the original recipe that I'd posted, where the texture was very delicate). These are so darn good. DO NOT EAT IF YOU THINK YOU COULD BINGE!!!

    For those of you near Whole Foods, they are now carrying Lily's Chocolate Dark Chocolate Chips (sweetened with stevia and erythritol!) I've also ordered these from Vitacost.

    Thanks for the recipes and the tip on the Lily's chocolate chips! I have only one bag of Nevada Manna left and wasn't sure if there were any acceptable substitues. They seem to have gone out of production.
