LC Pan Fried Chicken w/ Mushroom Cream Sauce
Got creative this evening and thought I would share what I cooked. If you like mushrooms then you will LOVE this! When I finished the sauce, there was definitely enough for 2 servings but since I was experimenting, I ate all of it. :bigsmile:
5.45 oz boneless, skinless chicken breast cut in small strips and fried up in a little Coconut Oil. (I did not count the oil with the chicken)

Mushroom Cream Sauce
2 Tbsp Butter
5 Cloves Fresh Garlic, diced
4 oz Baby Portabella Mushrooms, chopped
2 Tbsp Heavy Whipping Cream
2 Tbsp Water
2 oz (finely) Shredded Monterey Jack Cheese
Melt Butter in 8” skillet
Add garlic and fry for about 1-2 minutes
Add Mushrooms and fry until reduced and soft (done to your liking)
Add Cream and Water together, stir to simmer
Add Cheese and stir until thoroughly mixed.

Fiber: 1
Protein: 16
Fat: 51
Potassium: 562
Of course it will only be half the above macros if divided into two servings. Like I said, I was experimenting. :happy:

Did the chicken stay tender? I have a hard time keeping chicken tender when I stir fry it. It makes me crazy! I hate dry, tough chicken.0
