How to survive the LID (low iodine diet)

When I first heard I was going on the LID diet to prepare for the RAI for my thyroid cancer AKA "good cancer" (and THAT phrase is an overused oxymoron), I thought I was only going to be able to eat mustard, wood, sugar and surprisingly alcohol. So I guess I could have gotten drunk while eating my mustard, wood and sugar:drinker: Anyway, I looked at the LID diet on Thyca.com and did get some good ideas, but it still wasn't what I was looking for. I found an Amish white bread recipe on allrecipes.com and made loaves of that and had PB&J quite a bit for lunches, bought some Utz unsalted potato chips and warmed them up with some non iodine salt, pepper, and a little bit of garlic powder. They were the bomb and went great with my sandwiches. I also made some roasted almonds and mixed them with some dried cranberries and added little chunks of dark chocolate to the mix for a nice snack. It was a pain but I lasted 21 days as was required.

How bout you?
