    Cauli-Rice
    The Other night I was looking for something that would be low carb instead of rice.. so I got to thinking... Why not chop up some cauliflower and then cook it....WORKED Great and we actually Liked the taste better...
    All was chop it in tiny pieces... added it to boiling water and cooked for approx. 6 min... Then I drained it really well with a strainer...

    Cheesy Roasted Broccoli Patties
    2 teaspoons vegetable oil
    2 cloves garlic, minced
    1/2 onion, chopped
    1 (12 oz.) bag frozen broccoli, defrosted
    3/4 cup Panko breadcrumbs
    1/2 cup sharp cheddar cheese
    1/2 cup Parmesan cheese
    2 eggs, beaten
    salt and pepper

    Dijon Salmon
    Ingredients:
    5.... 6oz Salmon Fillets
    2 Tbs Fresh chopped parsley
    3 cloves of chopped garlic
    1 1/2 tsp of Dijon mustard ( brand of your choice)
    1/2 tsp salt
    1/2 tsp black pepper
    2 Tbs Olive Oil
    1 Tbs fresh lemon Juice
    Directions:
    Pre heat oven to 450 °
    In a medium bowl combine all ingredients (except for fillets)
    mix well..
    Place Salmon Fillets on a lined baking sheet
    Using a basting brush brush salmon with mixture on both sides
    Top with lemon slice
    Bake for 12 minutes. Serve with side dishes of your choice.

    THE BEST EVER PORK CHOPS
    Crockpot Ranch Pork chops:
    package of boneless pork chops
    1 can of Cream of Chicken soup
    1 packet dry Ranch dressing mix
    In crockpot layer pork chops, add the cream of chicken soup, then sprinkle dry Ranch dressing all over.
    Cover and cook on high for 4 hours OR Low for 6 hours.
    The pork chops come out very tender and the flavor is amazing! You also get a good gravy for mashed potatoes.
    I like put the pork chops under the broiler on both sides for a few minutes when I make this , but you don't have to

    Cheesy Cauliflower Pancakes are low carb, super tasty, and perfect for lunch or a side dish.

    Ingredients
    •1 head cauliflower (or a 16 oz bag of frozen cauliflower)
    •2 large eggs
    •½-3/4 cup shredded cheddar cheese (I love cheese, so use closer to ¾ cup)
    •¼ cup diced green onions
    •½-1 cup bread crumbs (I usually need closer to 1 cup)
    •½ tsp cayenne pepper (more of less to taste)
    •salt
    •olive oil
    •light sour cream (optional)

    Instructions
    1.Cut cauliflower into florets and cook in boiling water until tender, about 10 minutes
    2.Drain and mash the cauliflower while it is still warm
    3.Stir cheese, eggs, green onions, bread crumbs, cayenne & salt to taste
    4.Coat the bottom of a skillet with olive oil over medium-high heat
    5.Form the cauliflower mixture into patties about 3 inches across
    6.Cook until golden brown & set, about 3 minutes per side
    7.Enjoy with some light sour cream!

    Marinated Cucumbers, Onions, and Tomatoes

    3 medium cucumbers, peeled and sliced 1/4 inch thick
    1 medium onion, sliced and separated into rings
    3 medium tomatoes, cut into wedges
    1/2 cup vinegar
    1/4 cup sugar
    1 cup water
    2 teaspoons salt
    1 teaspoon fresh coarse ground black pepper
    1/4 cup oil

    Combine ingredients in a large bowl and mix well.
    Refrigerate at least 2 hours before serving.

    Yum! Sounds good. The cauli-rice sounds good too!
