Cajun Shrimp and Veggies...one of my favorites!

Grilled Cajun Shrimp & Veggies Over Brown Rice

Raw shrimp – peeled & deveined

Assorted vegetables for grilling

- cauliflower, zucchini, red onion, green pepper, green beans, tomatoes

Brown rice

Clean, shrimp and cut up veggies into chunks

You can either skewer the shrimp & veggies or just put on aluminum foil sprayed with cooking spray or a little olive oil

Drizzle with lemon juice, sprinkle with Cajun seasoning (I used Tony Chachere’s Creole Seasoning – my favorite) and sprinkle with crushed red pepper.

Grill on grill until shrimp is cooked through and veggies are cooked to your liking. I've also done this in a large skillet or wok.

Serve over brown rice

Based on: 4 oz shrimp, 1 ½ +/- c veggies, ½ c brown rice
