Roasted Sweet Potatoes

ROASTED Sweet Potatoes

•3 Sweet potatoes, peeled, past the rind into the pink, and cut into bite size cubes
•2 tablespoons olive oil, or favorite cooking oil
•1 tablespoon butter ( melt gently in microwave )
•1 tablespoon of brown sugar
•1 teaspoon of ground cinnamon
•1/4 teaspoon of ground nutmeg
•Pinch of ground ginger
•Pinch of salt

Preheat the oven to 350 degrees.
Coat a small baking dish with cooking spray.
Mix all of the ingredient’s into a small bowl, blend well with a small whisk.
Put the cut pieces of Sweet potatoes in a large bowl.
Note: WAIT for the oven to be at temperature before you coat the pieces
Pour the ingredient’s over the Potatoes pieces, and toss gently with a soft spatula until evenly coated.
Bake in the oven for 60 minutes. Stir the sweet potatoes once or twice during roasting.
