    Everyday Chicken & Rice

    1/2 White Onion - Chopped any way you like

    2 Cloves of Garlic - Minced

    1 Slice of - Jalapeno Pepper (Optional, or add more if you like)

    1/2 Cup Broccoli (frozen)

    1/2 Cup carrots (frozen)

    1 tablespoon - Extra virgin olive oil

    Salt & pepper to taste (optional)

    1 Whole - Boneless, skinless Halal Chicken breast - Chopped into small cubes(Whole is both sides of the chicken breast)

    1 Cup - Basmati Rice

    2 Cups Water

    Add the extra virgin olive oil to a skillet pan on medium high heat

    Add the onion, garlic, and pepper, stir occasionally until soft and caramelized

    While that is going, boil 2 cups of water in another pot, then add 1 cup of Basmati rice, cook until water evaporates

    Add the Halal Chicken to the skillet, stirring occasionally until cooked evenly(try to get a nice dark browning on the chicken)

    Add the broccoli and carrots to the Halal Chicken skillet, turn heat to medium, add a tablespoon of water, and cover with a lid until vegetables can be pierced with a fork.

    Add salt and pepper to taste

    Serves 2-4 people
