Hi there!
I stumbled upon an interesting recipe for low carb peanut butter cookies (btw here it is http://www.the-lowcarb-diet.com/2013/05/peanut-butter-surprise-cookies.html) but then I realised I have no idea where to get sugar free chocolate chips in the UK. Does anyone know of the lowest carb solid chocolate around? What would you suggest to use for this?
Cheers!

You can chop dark chocolate into chunks.
Here in the states, the best I've found is Lily's Chocolate Dark Chocolate Chips, which are sweetened with stevia and erythritol. They are sold at Whole Foods, or online from Vitacost.com.
There's a recipe to make your on over at All Day I Dream About Food

I've had this recipe on my to-do list for a while but haven't tried it yet. You could turn these chocolate bars into small chunks for cookies, and there's only 3 ingredients that I'm fairly sure you can get in the UK.
