LCHF Prep Ideas? (Cancer)

LCHF FRIENDS: Doctor has agreed I should go back on LCHF along with some meds to keep my blood sugar down (my body seems to turn protein into glucose so even strict Keto shows my blood glucose in the high-normal range, and it is very low when I'm actually consuming starches and sugars). I'm preparing mentally, emotionally, and getting rid of the starchy, sugary things in my house as I have to plan this out. I'm a planner type.
I'm making a master grocery and meals list, and I need your help. Sweets are the very worst for me - when I did Keto/LCHF for 7 months last year, I consumed lots of sugar alcohols which I now think is not good in the case of cancer (and I'm allergic to chocolate, don't do pork nor much flax seeds) so I need lots of easy, go-to ideas for sweets to get started. I don't mind sucralose and stevia. I know once I'm on it and in the groove, it's no problem - the longer you're away from sugars and starches, the less you even want them.
Here's my list so far, and please add to it to help me get prepared. Keep in mind, I'm shooting to keep my net carbs to 20 or below per day.
Make crunchy almonds with braggs
Make sweet pecans (I have a great recipe for this using Just Like Sugar)
Free-range eggs - keep boiled, make quiches
Make SF jello
Make cheese pizza crusts
Free-range, organic meats and cheeses
Mushrooms - for meat and cheese stuffings
Celery - for dips, soups, etc
Make kale chips
Make coconut oil fat bombs (ideas here, too)
When I get really sick from chemo, I like either oatmeal, banana or mashed potatoes as they are easy to eat and digest - any ideas for replacements? I'll try cauliflower faux-tatoes again. The thing is this needs to be super simple and something I can keep around for those sudden moments when my body is rejecting everything.
If anyone else is dealing with advanced cancer, please feel free to shoot me a note and friend request (whether or not you're doing a special diet). Thank you for any input! Love and hugs to all!!

Hi! First off, let me say I'm a planner too so I applaude you're attitude. I think planning is key to this way of eating. I always keep boiled eggs, cooked bacon, chicken,strips of beef,in the fridge as a snack. Last night I found a great recipe for a mug cake, called Keto Cake. heres the link : http://www.ruled.me/keto-chocolate-cake-mug/
I made mine in the oven on a muffin top pan. it made 2 good sized little cakes which i topped with whipping cream. Delish! almost like a brownie. Would definitely help with any dessert cravings.
I also make "protein bread" basically an ounce of cream cheese/1 egg/ 1 tbsp almond meal (all multiplied by how many you want) run it through your magic bullet (or blender) and pour into the muffin top pan, bake at 375 for 14 mins (give or take). These are great! you can keep them in the fridge & toast them when you want to eat them, perfect with some almond butter, or a grilled cheees. You can add spices or sweeten them up a bit with stevia & cinnamon for a sweeter treat. I love them.

You can make broccoli and cheddar soup to keep in the freezer. It's easy to eat, and you can blend the broccoli in there so no chewing is involved. I do this for many soups, but you have to put them in the containers while still hot, as the fats will seperate when cooled, and make dividing servings difficult.
Additionally, there's always protein shakes with almond milk and a bit of heavy cream tossed in there. If you whip it up, it gets really frothy and tastes delicious. I top mine with some cinnamon and nutmeg and it feels like a sinfully sugary treat. Super easy to get down, and there's enough calories, fat, and protein to keep you going for a while.
Shirataki noodles are very easy to eat/chew if you chop them up first. Just drain, rinse, plop on a cutting board and run a knife through them for a few seconds. Toss them in a pan with some butter or some low carb vodka sauce, alfredo sauce, or marinara sauce. I keep sliced mushrooms and sliced onions in the fridge. If you need something more bland, buttered noodles with parmesan cheese work absolutely fine. You hardly need to cook the noodles. I just heat them through and then eat. I also keep frozen cauliflower for this same reason. Defrost it by putting it in a bowl with hot water, run a knife through them, and toss them in the pan as though they were pasta. Soaks up flavor, doesn't add carbs.
I like to take the low carb tortillas and top them with a bit of butter, cinnamon, and powdered sweetener. I pop them in the toaster oven and let them cook and crisp up a bit. You can cut these into triangles first and you have something that resembles cinnamon toast! Super easy to make, and pretty easy to eat.
I just tried the Lemon Cream Cake from All Day I Dream About Food, and it was amazing. No chocolate or flax involved, and pretty darn easy to make. You can keep it in the fridge and take a slice whenever you have a sweet craving.
