Interpreting weight stabilization or gain

Anyone else have days that they thought were safe, but have an unexplained weight gain or stabilization? I have been on the plan for nearly three weeks, and am on Day 12 today. I had a weekend away, that I didn't have control of my food, that adds to the time it is taking me. But much of it is having to do 'rest' days, after reacting.
I ate bread as a test, and didn't react the next day, which surprised me, because I have been gluten free for a year and a half, and have gotten pretty violently ill when eating gluten (before getting my inflammation down.) But then I gaind the day after the bread day, on a rest day.
Does anyone else think they experience a delayed response to a test?
Also, I feel discouraged because at this point, I haven't even gotten to the point where I can test the things I ususally eat. So far, nearly everything I am eating are things I didn't used to eat. I am glad for the broadened food experience, and have been pleasantly surprised by how much I am enjoying the food. Still...
At this point, I am trying to figure out if I am responding to Swiss Chard, Zucchini or kale. Anyone else have trouble with any of those?

(PS: As a side note, I have noticed a substantial improvement in sleep and energy on the plan. Additionally, I was on an anti-depressant (lowest therapeutic dose), and am off it now, and feeling quite good. So I do think there are substantial benefits to me.
