Raw Vegan Apple Pie

This experiment turned out too good not to share!

Crust:

1 cup coconut flour

1/2 cup alt milk

1/3 cup coconut oil, melted (more for greasing)

1/4 cup agave nectar

1/2 teaspoon vanilla extract

1/2 teaspoon sea salt

Filling:

2 large apples

25 deglet noor dates

Cinnamon to taste

1) Use coconut oil to grease an 8″ baking tray.

2) Combine all crust ingredients in a mixing bowl and completely combine. If you need to melt the coconut oil, you can float it in a small bowl within a larger bowl of hot water.

3) Once the batter is mixed, press it into the bottom of the baking tray.

4.) Puree filling ingredients in a blender or food processor until smooth, and pour over crust.

5.) Refrigerate to set overnight.

    This sounds really delicious! I think I would like to leave at least some of the apples a little chunky for some texture. I don't have coconut flour - but do you think garbanzo flour would work, or will that be too pasty?

    You might need to increase the amount if you're going to be using garbanzo flour, since coconut flour absorbs a lot of the moisture. Just keep adding flour in until you get a crust like consistency. :)

    I'm sure any nut or oat flour could probably work

    As well ad adding,raisins,or a favorite nut to part of the filling.
