prepping meals ahead of time

I just recently found out I have type two diabetes and I am trying to prepare my meals for the next week. I've tried hard to stick to low carb and fat foods but always end up eating more then expected. Any suggestions on simple low carb low fat meals or sides I should add to my diet.

Hello,
I usually plan out meals for the week,especially for lunch. I try to balance them with protein and vegetables primarily. And then I add in fruits and other carbs to match my sugar level and activity level.
Usually my meals comprise of Chicken that I cook in a batch and it could be breast,leg, quarters usually skinless and I cut out the visible fat. Or other things like fish, lean pork, goat and lamb. Again I usually prepare a batch.
I will then pair it with
1) Broccoli, Carrots, Cucumber, Kale, Spinach, Tomato, Celery, Brussel Spouts in various amounts.
2) Apple, berries of all kind, in very small amounts, just to match my activity level and sugar levels.
Also, I do supplement sometimes with LOW CARB products such as:
MINI PITA Bread with Flax, Oat Bran and Whole Wheat
PITA Bread with Flax, Oat Bran and Whole Wheat
Sugar Free High Fiber Hot Cereal-Apple Cinnamon

Now you can eat regular bread or rice if you like. It just depends how it affects your glucose levels. Mine is hard to maintain with those food items,but if you can manage it with them, you should have them if you like.
Finally, I also like to like to add in carbs such as butternut squash for my post workout meals. Again, you can try and figure out portions, as to what works for you.

I pack a lunch for work, and it is usually 200g of mixed frozen vegetables and some protein. The protein is often leftover meat, or if there aren't any leftovers, a boiled egg and a few slices of turkey based luncheon meats.0

Veggies, protein and dairy are my mainstays. Eggs, lower fat cheese, greek yogurt, nuts, peanut butter, tuna, chicken, turkey, non starchy veggies such as green beans, cauliflower, cucumber, carrots etc and some fruit like berries or frozen banana slices.
I love Mission carb balance tortilla wraps instead of bread for sandwiches/wraps. Soup is a great make ahead and get several meals out of it item. Salad fixings can be switched out for different flavors, bags of frozen veggies are easy to fix when you don't have much time. Bake a whole chicken and separate into individual portions.0 -
Are you eating more of the lower carbohydrate/protein/vegetables or more of the types of high-carbohydrate foods you'd like to avoid? It can be helpful to think about what leads to the overeating: is it because you're still physically hungry, or is something else going on? ~Lynn /Glucerna0

One of my favorite things to do is to make a LOT of the same meal that I can break up throughout the week. For example, I'll pop 4-6 chicken breasts in my slow cooker with some salsa (homemade is better, look for lower sodium options though). I can then shred the chicken and use it 1. over a salad, 2. by itself, 3. in a wrap, 4. on a bun, etc. I like that it's versatile so I don't get sick of it through the week. I can then also cook up a BUNCH of veggies to eat throughout the week. My favorite is broccoli. A little bit of extra virgin olive oil, fresh garlic (I buy the kind that's already minced), and a little bit of sea salt. Put it on a pan and into the oven for about 15 minutes. That'll last me quite a while. I also like Turkey burgers (I buy the 3 lb. roll of turkey and make a batch of burgers. I eat just the patty, no bread, and that'll last me 3-4 days)... Just a few ideas. I hope that might help a little bit! Overall, I LOVE my crockpot!!! It's been a LIFESAVER when planning ahead for the week0

Fat isn't bad for you, unless it is trans fat. Did someone advise you to go on a high protein diet?0

Every Sunday I usually make a large pot of a Chicken or Beef soup with brown rice and mixed froze vegetables, we then eat from that through out the week for dinners and lunches. I work at a desk all day so I usually have access to a microwave during the day if I need it. Usually for lunch though I will pack a lunch with a large vegetable salad or a sandwich wrap.
Here are some things I have found that work for me
Aldi's Fit and active products.
Low sodium fat free broths as a base for the weekly soups.
Fit and Active Sandwich wraps with flax seed make great sandwich wraps.
I also buy large quantities of vegetables from Costco every week for my salads. The large tubs of mixed green's are used all week in both sandwiches and salads.0
