Staring Atkins Today...but I Hate Veggies :(

Hi! I am totally new to Atkins. I started today, on Phase 1. I think I can handle everything...except, I don't like 99% of the vegetables we are supposed to eat. I have tried them at various times over the years, and I just can't choke them down. Today, I tried roasting broccoli and cauliflower in the oven, with some olive oil and salt....I almost gagged trying to eat them
I know that the vegetables are a staple part of the program. Pretty much the only ones that I like that are okay to eat are: cooked onion, cooked bell pepper, sauerkraut, green beans, and green olives. In your opinion, can I just eat those and still do okay on the program? I really want to succeed at this.

Holly, i ecourage you to read the OLD atkins books, the ones from the 70's, you can find them at the library and online, in those books, you DO NOT EAT VEGIES!!!,,, its mostly meat eggs cheese and creams YUM,,, you dont have to have those vegies, thats the new atkins books, the ones written after aktins passed away0

If you aren't going to eat any veggies, definitely choose a very potent multivitamin.0

its interesting that some people feel you dont get vitaimins from meat, have you ever heard of "fat soluble vitamins",, there also a study years ago where 2 guys were put into a doctors care and lived there under watch for a whole year and they ate nothing but meat for an entire year, and they were perfectly healthy0

The Atkins Diet has always included low carb vegetables. Even in 1972. I have an original copy of "Dr. Atkins' Diet Revolution", and I'm not afraid to quote it.
That said, there are folks on some of the low carb forums that call themselves "carnivores" and eat very little vegetables. There's an on-going debate as to whether vegetables are really necessary at all, but since most of us don't "eat head to tail," it's hard to get some nutrients if you eat no plant matter at all. Like Vitamin C. Of course, you can get Vitamin C from some animal foods. Raw beef liver, anyone?
The salads in Induction Phase of Atkins are good to add variety and palatability to your diet. Just eat the veggies you like. Be sure to take a multivitamin.
It's also possible that you might come to like a different preparation of a vegetable. Like, boiled cabbage is pretty boring, but cabbage braised with bacon is pretty tasty, KWIM? Give it a chance every once in a while, you may find your tastes change after having been on the diet. For example, even vegetables taste a little sweet to me now. You become very sensitive to "sweet" tastes - and may enjoy vegetables more.0 -

They ate organ meat, most people in the USA don't unless it's hiding in their McRibs. Because of this if no other vitamin is lacking, vitamin C probably will be.0 -
sure go ahead and "QUOTE" the old 1972 atkins book on vegies, but you will be quoting from the section on OWL or maintenance, and not from the section on "indcution", its the induction phase that the new book seems to skip over by starting vegies right away, so to reply to the original poster of this thread, if your "STARTING" atkins you do NOT need vegies
if your going to quote the old book at least quote from the correct section and which phase,

You don't need veggies, but if I remember right, Atkins was big on multivitamins, not just for low carb eaters, but for everyone. And not all multivitamins are made equally.
Edit: Also fiber if you aren't eating veggies. There are two types of natural fiber powders you can get from Costco or the pharmacy or whatever. I think one is made from citrus rinds, I forget what the other is made from.0 -

Dressings can be made with vinegar, oil, salt, dry spices, herbs, grated cheese, or anchovies. You can also have a sour pickle in place of a salad. Plus green olives."
Salad vegetables are still vegetables (well, cucumbers are technically a fruit...but you get the point)... and Induction is a two-week period. Yes, I know that Dr. Atkins said you could stay on Induction longer. But too often I see so many people become so carb phobic that they are scared of eating any vegetables on this diet. They stay restricted to Induction levels and never transition to OWL and get bored and sabotage themselves. They get all their carbs from cream and cream cheese and flax and agonize about eating a few slices of tomato or a handful of berries. Dr. Atkins stressed the importance of OWL and to transitioning to maintenance via the gradual re-introduction of foods restricted on Induction via the carb ladder. Dr. Atkins changed his own diet over time to keep up with his observational clinical findings and the latest scienctific discoveries. If you're not eating any vegetables at all, you're not doing Atkins, you're doing something else.0 -
you are correct, once your in OWL , and many people do not go into owl, also old atkins seems to be judged entirely on the induction phase, the whole point of this topic was to tell the poster that the "new atkins" that requires so many vegies in the induction phase just doesnt have to be done if she doesnt want to eat them0

Eat the ones you like. If you eat salads throw some spinach in that sucker.0
