Hey ya'll, its summertime almost and this time of year I love cold soup.
So here is my gaspacho go to
1 cucumber seeded and diced
1/2 green pepper diced
4 to 5 scallions sliced thinly
V8 juice, which ever you like
1 Tbs vinagar
2 Tbs worcestershire sauce
2 to 3 roma tomatos seeded and diced or 1 can prediced tomatos
Mix all well and refrigerate at least over night.
You can also add cilantro if you like it
This works out to around 105 calories per cup.
Enjoy

One of my favorites is Broccoli Salad! Yummy!
5 cups copped broccoli
1/2 cup raisins
1/4 cup copped walnuts
1/4 cup shredded carrots
1/2 cup light miracle whip
1/4 cup skim milk
4 or 5 pks sweetener
Mix well. Let sit a few hours ( I make it the night before) makes 8 - 3/4 cup servings. About 100 cals per serving.

My favorite thing to make in the morning is probably banana pancakes. These are ridiculously simple to make with only three ingredients!
1 banana
1 egg
1/4 cup of rolled oats (sometimes I use wheat flour)
Basically you just mix the ingredients together (stir in the oats/flour in last) and make them like regular pancakes.
If you eat all the pancakes that this recipe makes then it will cost you about 175 calories in all
