    I will start! My favorite "adapted" recipe so far is what I like to call "Lasagna Roll Ups" (even bf approved!)

    Lasagna Roll Ups
    Prep time: 25 minutes
    Cook time: 25-30 minutes
    Serves: 8 (hefty portions!!)
    241 Calories per Roll

    8 Lasagna noodles (I calculated using plain old Barilla white lasagna noodles)
    1/2 pound 90% ground beef (could sub ground turkey or go meatless if that's your thing)
    1 cup whipped cream cheese
    1 egg
    1 T garlic powder
    1 T parsley flakes
    2/3 cup tomato sauce
    1/2 cup tomato paste (no sugar added)
    2 t oregano
    2 t basil
    1/2 cup shredded part-skim mozzarella (could use fat free)
    1/3 cup shredded Parmesan cheese


    Brown ground beef, drain any grease. Boil lasagna noodles until tender, about 10 minutes. Mix together, cream cheese, egg, garlic, parsley and 1/2 Parmesan cheese. Mix separately: tomato sauce, tomato paste, oregano, basil and cooked beef. Lay lasagna noodles flat on dish towel to dry. Spread about 2 tablespoons cream cheese mix on each cooked lasagna noodle. Spoon about 1 tablespoon sauce on top. Roll noodle. Repeat for remaining 7 noodles. Arrange rolled noodles in baking pan (I use an 11x7 glass dish). Top with remaining meatsauce. Sprinkle with remaining Parmesan and mozzarella. Bake 25-30 min at 350, or until cheese is melted.
