Exercise on 'rest' days

I started the C25K yesterday and did an extra 60 sec job before the cool down. After that I ended up doing some weights and 20 minutes on the elliptical. Since the program is only 3 days a week and I've been going to the gym 5-6 times a week I would like to keep up my habit. I've been exercising for a few weeks before starting the program.
So my question is, could I do a shorter version of week 1 day 1 today and focus more on weight training without being a problem? I'm usually at the gym for over an hour most sessions, so I know I can keep up the exercise. (I cut yesterday short because I had to get ready to meet someone.)
Or should I perhaps even move onto W1D2 and do weights but no elliptical or other cardio? I usually end up doing 2 different cardio machines per visit.
Any advice is appreciated. Thanks.

I do my C25K workout and lunges/squats/burpees on the same day. I figure I'm already warmed up. I work my arms on the C25K rest days.0

In general I'd recommend keeping the rest days from running, but do something else. Running causes quite a lot of load on your system and the rest days give the muscles, joints etc an opportunity to recover and rebuild. If you don't take rest days you risk a progressive overuse injury.
I used to swim or cycle on my non-running days.
For CV work I'd avoid the elliptical and use a rowing machine as a more comprehensive workout.0
