Duke mayonnaise

Hey! I'm wondering if anyone has ever made a homemade mayo that tastes like Dukes? I know this is a long-shot, but thought I'd ask. I'm planning to make some pimento cheese, and hear that it's heresy to use anything but Dukes. But I'm trying to avoid the soybean oil if I can.

My mayo recipe is identical, except that I use two egg yolks and reserve the white for something else. I don't eat raw egg whites as they bind with dietary biotin, making it unavailable to your body.

Use light-tasting olive oil. The result is delicious.

Thank you for sharing this recipe! I made some in the Vitamix yesterday and it is outstanding - much better than the store bought concoctions! (If you follow the directions it's easy and quick as well.)

I just made some using the stick blender. It's chilling in the fridge now. Delish.

I sub extra light olive oil (not extra virgin) for the veggie oil.
