Thought it would be great to have a page we can post recipes and good foods instead of scrolling through other blogs. Emy, the freeze ahead steak fajita sounds great!

I've got 2 to start:

1. Ocean Spray Cranberry Lemonade. 5 calories. 0 fat and 0 sugar. Tastes like a 'regular' lemonade and is really good!

    I made this several weeks ago (before I started the 17 day diet). I couldn't have the beans on cycle 1 of the diet, so I froze the leftovers and then pulled them out again over the weekend now that I'm on Cycle 2. I think it tasted better the second time around:

    It was delicious! I'm going to freeze half of it when I get home tonight to save for next week.

    Edited to add that I didn't use quite as much cheese as called for in the recipe.

    Emy that sounds delish!

    I'm adding that and an apple recipe I found to my grocery list this week.

    Apple recipe:

    Quarter apple and remove core. Place in casserole dish; drizzle with a little olive oil, sprinkle on 1/2 tsb each cinnamon &chili powder (optional), juice from half lemon, 1-2 pkg. splenda or 1 pkg truvia. Bake at 350 or microwave until soft

    The apple sounds delicious! It would be wonderful as an after dinner dessert if we could have fruit in the evening. I'm going to have to get used to having my "dessert" as a morning snack or with lunch!

    I think of it as a special breakfast treat on the weekends!!! Hope you enjoy :)

    Okay, I have a new recipe to share. I made it last night, and I'm still thinking about how delicious it was! I have some leftovers for lunch but I'm saving them until tomorrow.

    Instead of the breadcrumbs, I used an almond meal recipe found here: http://www.mmmmpaleo.com/2013/11/italian-seasoned-bread-crumbs-aka.html. And I made a homemade slow cooker marinara sauce: http://thrivinghomeblog.com/2012/12/slow-cooker-marinara-sauce-recipe/. The marinara recipe made lots, so now I have plenty in my freezer for future use.

    Cindy, the almond meal is probably not allowed on our diet, but I did it anyway! I'm pretty good about following it to the letter, so don't think this will hurt too badly.

    Emy, this sounds so good … and if you are still thinking about it, it must be! I understand the 'not on our diet', but I've made a few exceptions here/there when needed and it hasn't hurt any. I think doing it daily would make a difference, but the light-cheats are okay.

    Here's a yummy crock pot side dish...

    Apple yam casserole

    1 (20ounce) can apple pie filling
    1/2 teaspoon cinnamon
    2 tablespoons brown sugar
    1 (24 ounce) can yams, drained and cut into bite size pieces

    Spray slow cooker with non fat cooking spray.

    Open can of apple pie filling, insert a sharp knife into the can, and cut the apples in the pie filling into bite sized pieces.

    In slow cooker mix together the apple pie filling, the cinnamon, the brown sugar and the yams.

    Cover and cook on high for 2 hours, or on low for 4 to 8 hours.

    Serve warm

    12 (1/2 cup) servings
    Calories: 80; Fat 0g; Cholesterol 0mg; Carbs 19g; dietary fiber 2g; Protein 1g; Sodium 49mg

    another easy crock pot recipe...

    BBQ CHicken and Corn on the cob

    2 pounds boneless skinless chicken breasts

    1 (16 - 18 oz) bottle of bbq sauce (I like Sweet Baby Ray)

    1 package (6 mini ear) frozen corn on the cob

    Spray a slow cooker with non fat cooking spray.

    Place the chicken breasts in the cooker.

    Pour the bbq sauce over the chicken.

    Put all the mini ears of corn in aluminum foil and wrap to seal.

    Place the foil wrapped ears of corn on top of the bbq chicken.

    Cover and cook on low for 7 to 8 hours.

    6 servings (5oz chicken and 1 mini ear of corn on the cob)

    Calories: 262; Fat: 4g; Cholesterol: 88mg; Carbs: 18g; Fiber: 2g; Protein: 38g: Sodium: 721mg

    This recipe was inspired by something I cooked a couple years ago, I think from a Jillian Michael book. These are not exact measurements, sorry, it was a throw it in the pan kindof night...

    Grilled Sausage and Veggie Saute

    Chicken Dinner Sausage (I look for the natural ones with no preservatives, nitrates, nitrites)

    1 large sweet potato, peeled and cut into 1/2" cubes
    1 large sweet onion (Vidalia if you can get it), chopped coarsely
    2 green bell peppers, chopped coarsley
    2 yellow squash or zuchinni, peeled and cut into 1/2" cubes
    4 cups of baby kale or chopped kale
    Coconut oil or Extra-virgin olive oil
    Salt & pepper

    You can grill or broil the sausages. I started cooking mine as the oil was heating in the saute pan. You can choose whichever oil you want, I started with the coconut oil, heated it and added the sweet potatoes. Cooked those for 5-10 minutes on med-high heat stirring occasionally. Then I added the onions and peppers and cooked another 5 minutes, then dumped in the squash and cooked until the potatoes seemed to be almost done. At this point my pan needed some extra oil, so I threw in the kale and some extra virgin olive oil to keep stuff from sticking. I cooked until the kale was wilted and bright green. I used baby kale which cooks really fast, if you use regular kale, just taste it to make sure it isn't too tough. Add salt and pepper to taste.

    That's it. I just served the sausage next to the veggies. This made enough for 4 adult servings and 2 kid servings.

    Pam, this sounds really good! I've not been a big vegetable eater in the past, but I'm really starting to enjoy them now. Especially love ideas for getting more kale into my diet.

    I made a simple,, quick but delicous recipe last night: Ginger Glazed Mahi Mahi:

    I found another good, easy recipe this week: Mom's turkey and peppers: http://www.simplyrecipes.com/recipes/moms_ground_turkey_and_peppers/.

    I was not expecting a whole lot from this dish. Just needed something quick for my dinner, as my family was eating at my mother-in-laws. It was really good, and my youngest even ate some when she got home.

    This page reminded me of that yummy apple - I'm going to make that again tomorrow morning!!
