Shrimp Salad....thnk I'm on a shrimp thing lately!

Shrimp Salad
Serves 2

Ingredients:
25 large cooked shrimp 1 1/2 T lemon juice
1/2 c diced red onion 1/4 c diced red pepper
1/4 c diced yellow pepper
Shrimp Rub:
1 T garlic powder 1/2 t black pepper
1/2 t oregano 1/2 t parsley
1/2 t crushed red pepper flakes 1/4 t kosher salt (or Mrs. Dash)
Avocado Naise:
2 T ripe avocado 1 T lemon juice
Preheat broiler to 400. Chop shrimp and place in bowl. Cover with lemon juice. In a separate bowl, combine all the spices. Add shrimp and shake until covered. Place shrimp on a foil-lined cookie sheet and place in oven on the top shelf. Broil for 10-12 minutes.
Once cooled return to bowl. In a separate bowl, mash avocado with a fork. Add lemon juice and mix until creamy. Stir into shrimp mixture. Add diced onion and peppers until combined.
Serve with or on a whole grain bread or tortilla!
