The entire group is open to individuals trying to lose 50 or more pounds, and of course each of us is taking a different avenue to reach the same end goal - Weight loss! But of course, one may have questions pertaining to their specific diet regime that other group members who aren't following the that plan plan may not be able to answer, so I wanted to create a thread for the group members who are following (or attempting to follow) a low carb diet.
Whether it's the Atkins, South Beach, Keto, Low Carb/High Fat, or just an attempt to cut down on carb intake with no general "plan" behind it, feel free to post questions, comments, recipes, triumphs and even failures so that we may continue to motivate each other!
At 247 pounds (the largest I have ever weighed in my life) I realized that I was going in the opposite direction on the scale...After three weeks of working out with portion control, and watching what I ate, I dropped 3lbs. A bit discouraged I went to my doctor who recommended the Atkins diet. I started this past Saturday, June the 28th and am scheduled to report to my doctors office every Friday for a weekly weigh in and measurement check.
Went today due to the fact that they will be closed tomorrow, and BEHOLD! 4 lbs and 1 inch off the waist. (AND THE CROWD GOES WILD!).
At just a week in, I don't claim to be a LC Guru, but my doctor was extremely thorough in taking the time to explain the process and I have devoted a whole week to the study of low carbing including research information, studies, and trials from both proponents and opponents.
Also, I'm sure there are a few of you who have been at it longer that may have some information and knowledge to share....so please, feel free to post here regarding anything related to livin la vida loca-rb! Yeah, I just said that....

I'm not following a specific low carb diet, but I do seem to have a fairly LC thing happening. One of the reasons is that my boyfriend found out last year that he has type 2 diabetes. I basically slashed the carbs in my cooking after that. Our dinners tend to be a meat/protein dish and vegetables. I still make things with rice or legumes or potatoes sometimes, but they play a much smaller role in our meals now.
One of the things I've tried a few times is shirataki noodles, which are made from the root of a plant, I think. They have almost no carbs. They're not as tasty as "real" noodles and the texture is bit rubbery, but they've been a decent substitution for rice noodles when I've made stir fry. I'm not sure how they would fare in an Italian-style pasta recipe. I suppose with a really good sauce, you might not notice texture of the noodles as much? You can usually find them in the grocery store in the tofu/vegetarian section.
There's also a high fiber/low carb bagel called Alternative Bagels that my boyfriend has for breaksfast sometimes. But I think they might be more of a local southern California thing.

Thanks for the tip, I'm gonna head out to whole foods tomorrow and look those up.
Here's a great post from another thread that gives some good tips on how to prepare them so that they have a better texture. Let's try it!
