It's summer time!. I don't know where you live but here in the Bay State it's been the 3 H's for the past week, Hazy, Hot and Humid. On days like that, who wants to cook? So either the night before or early in the morning I put together this creamy soup (ok, there's a little cooking involved but it's so worth it), refrigerate it and have it for lunch.
Cold Sweet Pea & Mint Soup
serves 4
2 tablespoons unsalted butter
1 onion, chopped
2 cups low-sodium chicken or vegetable broth
1 pound package frozen peas
3/4 cup loosely packed fresh mint leaves
sea salt
1. Melt the butter in a medium saucepan over medium heat. Add the onion and 3/4 teaspoon salt and cook, stirring often, until tender, 6 to 8 minutes. Add the broth and bring to a boil.
2. Place the peas and mint in a blender and add the hot broth mixture. (Because hot liquids expand when blended, hold the lid firmly in place with a kitchen towel before blending.) Allow to cool and refrigerate until ready to serve.
