Suggestions/Tips for Making Oopsie Rolls?

Hi All,
finally my husband has done his research and is joined me in my keto adventure so I wanted to make some large batches (and freeze) of oopsie rolls so we can make keto-friendly pizzas or sandwiches.
Any tips or suggestions for a first-time roll maker? (Even though I've never made oopsie rolls, I'm no stranger to baking rolls, bread, cakes, etc so I want to make sure I'm not missing out on any important steps or tips to making the best oopsie rolls possible)

Room temp eggs, cold bowl & beaters! I always put my bowl & beaters in the freezer. I also add a touch of cream of tartar to my egg whites which helps them keep their form. I also always use parchment paper. keeps them from sticking & brown nicely
Personally I've gotten away from oopsie rolls. I love flax bread (zero carb!) http://www.justapinch.com/recipes/zero-carb-flax-bread.html which works awesome for sandwichs & stuff. & if you like thin crust pizza try http://ginnyslowcarbkitchen.blogspot.ca/2014/06/thin-crust-pizza-crust.html . Watch out for carbs in pizza sauce. it can be surprisingly high.0
