Hey..so whats this about a new fruits and veggie challenge? I didnt make it to whole foods so my options were meh...but here we go!

Well, I ate my first one.....and if it is any indication how the other two are going to taste....I am in BIG trouble! I tried the Kumquat...........first off....I thought the Youtube video link said you are suppose to pop them in your mouth and eat. Well the skin is like an orange....after I bit into that, it was downhill!! I tried to peel it and that did not work well. So I squeezed the little thing for the juice and it was extremely TART....not a pleasant experience!!! So one down......2 to go!!! Hope the other two are better than this was!! UCK!!!
I LOVE eggplant and Mango is the best!!! Have not had a cacti before....I did have the prickly pear jam....it was good. Anxious to see what you think about it!!0 -
These are the 4 new items I selected, and as I mentioned above, the Kumquat was not a 'hit' it is a 'miss'!!! The tall green thing is a White pumpkin, orange on the left is the persimmon and then the green round item is the Maracuja!!

Oh I love mangoes. I think I need to get one just for the heck of it. I tried my Corinth black grapes and they were quite good. It takes quite a while to each your way through them so they are perfect if you are in a snacky mood. They are also quite sweet. I would say the first fruit was a success.0

Ugh, I am having an off day. Woke up in a bad flare, took me three hours just to get myself together enough to get to the chiropractor (and an hour of awesome deep tissue massage... nothing like getting the crap pounded out of your muscles). Tonight I have to go to Brunswick for an overnight sleep study. Yay! Finally! I'm already on a c-pap for sleep apnea, but for months now I've been waking up 3-4 times each night short of breath with a racing heart, so hopefully tonight we'll figure out what's going on and I can actually get some restorative SLEEP. That kind of stress on my body is also triggering Still's flares, so I should get some relief from that too. Medical Mess!!! Thank God I have so many other good qualities, LOL.
I haven't been to the store yet. I'm thinking I'll go tomorrow morning after my sleep study at a natural foods store down the road from the hospital. Can't wait to see what fun things are there!

Heather, I can't believe you've never eaten eggplant before! Wow. Do you need a recipe? I LOVE eggplant! Easiest is to peel, slice, season, and grill. Most yummy is to make ratatouille.

No weigh in for me today. I'm saving it for tomorrow, or maybe monday, or maybe next week. I hate the scale. If I don't lose "enough" I'm pissed off. If I lose "too much" I see that as permission to have a cheat weekend. If I lose "just enough," then I spend the next three days jumping off and on the scale all day looking for more. I know I'm losing--I can see it and feel it and my clothes are telling me I'm losing, so I think I'll skip the scale obsession this week.
Okay, no more posts... I need to get in a LONG swim before heading up to the hospital.

I'm on vacation and therefore didn't weigh in today. I'm dedicated to this process but not THAT dedicated to bring a scale with me! I'm just hoping to enjoy myself but in a smart way!

I am so sorry you are having another flare. There has got to be sone relief in your future. I am always amazed and inspired by your positivity. As long as you know it is OK to not be super woman all the time. We love and support you through it all! Ups and downs!

I want to say Ive tried eggplant parm in one of those Healthy Choice meals or something, but can't say for sure.
I am going to post a pic of my lunch/dinner in the recipe thread. It should be safe bbecause I think it is quite healthy and definitely the best mix of sweet and savory salad I have ever had. So so good.0 -
I'll go to the farmers market tomorrow to get some things. And then on sunday I think I will attempt my big ride and do the entire Iron Horse Trail (http://en.wikipedia.org/wiki/Iron_Horse_Regional_Trail) a little over 27 miles. If I can't do all 27 then I will aim for 24 and then take the train home.0

Karen, I'm with you on the skipping the number obsession. My scale and I have broken up so I'm not weighing in like before. I think I will probably weigh in in the next week or so, just so I can see where I am since I haven't weighed since we started the challenge. But then I probably won't weigh in again until the end. I trying very hard just to concentrate on getting healthy and if I lose weight too then that's just a plus.
I went to the store yesterday and picked up my veggie/fruits to try this weekend. I almost got an eggplant as well Heather but decided against it since I was trying to spend as little as possible. Besides with it being a bigger veggie, there would be a lot that went to waste with only me eating it and especially if I didn't like it. So I decided to stick with smaller items. The three I finally decided on were: mango, apricot and garbanzo beans.0
