What's your go-to meal for a week's worth of pre-cooking?

Last week I cooked three days worth of meals for the boyfriend and myself and I keep asking myself why I didn't do it sooner. Seriously the most convenient thing I've ever done with almost zero planning because I have a pressure cooker. We have Bullet Proof Coffee for breakfast which means I only really have to cook two times a week totaling out to 12 meals between the two of us over three days. I'll start by sharing a recipe I'm excited to try out, being that this first batch was a little bland.

I live in Inner Mongolia as an English teacher and there is this local dish called Hui Cai. It's mashed white potatoes, green beans, salt, garlic, and beef jerky. I was always hoping that beef jerky in meals would catch on in the states, but it didn't! Luckily, I moved to the meat capital of China, haha.

We ate this the other night for Chinese Valentine's Day and it hit me that this could easily be made paleo by just swapping out the white potatoes for cauli-mash, sweet potato, squash, etc. I'm a firm believer that green beans are paleo, but if you're super strict you could easily do asparagus as well.

I'm still not sure about measurements, but I'm assuming If we rotated this for lunch and dinner three days between the two of us, we could use 3-4 medium sweet potatoes, 1lb of green beans, a bulb of garlic, and 1-1 and 1/2 cups of beef jerky for six meals. I'd cook the potatoes/cauliflower, garlic, and salt first, mash it, throw everything else in and cook again for 15-20 minutes to make the jerky a little more tender.

If you're using sweet potatoes I'm thinking this would be awesome for a post-workout meal or to load up on carbs the night before an intense workout. Not having to deal with raw meat can sometimes be a plus too.

So, what's your favorite meal(s) to prepare in advanced? I'll post pictures of how mine turns out later. Making it tonight :D

    I made 5 spicy Italian sausages smothered in a Marinara sauce. I cut them up after grilling them tossed them in a container and drowned them in my sauce. This is for 4 of my lunches this week, I usually do this every Sunday.

    I made a large pot of bolognese to eat over zoodles- 4/5 meals this week and will make chicken curry madras to eat over caulirice later this week- 4 meals. Hopefully this will help keep me on track.

    I make batches of food to last the week or freeze for later. Crockpot Kalua pork- Nomnom Paleo recipe- 5-7 lb pork shoulder/butt, good for at least 3-4 meals, 3 lbs of meatballs made with grass-fed ground beef & pork sausage- baked in oven, good for at least 5 meals, Everyday Paleo Kitchen sink soup- large pot good for several meals- freeze for backup meals. Now my garden is full of veggies, been making a lot of ratatouille- a big casserole lasts for several dinners side veggie dish.

    I made meatloaf muffins and Buffalo Chicken muffins, and chicken salad today so far...trying to get in a sausage stir fry as well, but looking like bedtime soon!
