HELP - Breakfast ideas for dieting guests please?

We're having guests for a long weekend at the lake. It was a challenge before to come up with a menu for everyone, now it's even more difficult. C doesn't like noodles, tomatoes/tomato sauce, strawberries, pistachios, many vegetables and usually avoids breads, but loves meat (especially hot dogs) and cheese. She's on a 1100 calorie diet (with 'speed' supplement and will exercise to earn some calories back). J doesn't like anything spicy, but loves cheese, sweets and anything in the bread family. She's on a 1800 calorie diet (with speed supplement). Rick, well, he's pretty easy, but functions best on LOTS of calories. I'm not too worried about me - if something doesn't fit plan, I'll happily have my chicken or shake (and share if anyone is interested, which they are usually not). J & C are not counting ANYTHING but calories.
For main meals I've come up with my chicken stir fry(285 cals plus rice and sauce optional), 350 cal hamburgers (bun and condiments optional), and parmesan crusted tilapia (250 calories per fillet) plus steamed veggies. There will be lots of fruit and snacks (some healthy, some not) available.
But, I don't eat breakfast & they do. In the past I've usually offered purchased breakfast pastries (muffins, rolls, turnovers) or breakfast burritos. But the pastries are O-U-T this trip, and by the time J fixes her two overstuffed burritos with cheese I'll have sabotaged her plan before she even starts her day.
I'm checking to see if either of them like cottage cheese, but sure could use some ideas on what to fix for breakfast. I can find my way around a kitchen, but cooking is NOT my forte and my pantry isn't filled with healthy ingredients. Suggestions please (and thank you!)?

You have come up with some good meal plans Marilyn. Has nobody said no to eggs? If it was me, I would go to the store and get lots of cut up fruit, eggs and something like smart bagels for the ones who want bread.
I'm sure you will come up with something as you did so well with the main meals.0 -
First, let me say, it absolutely blows me away that they are that picky when they are guests.
But I would get ground turkey sausage, or (the real thing) or Canadian bacon, English muffins, and eggs. Then I would make breakfast biscuits for them. Very simple to make and can be made healthy. Just an ides.
What about healthy blueberry pancakes with sugar free syrup or use fruit as a topping.
Veggie omelettes
Marilyn, thanks for telling me about the protein shakes. I had one this morning and it was great. Thanks!!0 -
Thank you for your replies here and on my status! I have pretty much decided to go the lazy route (with the help of Claud and others (including my husband) who tells me I worry too much. When it comes to meals for guests, I am DEFINITELY my mother's daughter! I texted the two ladies and said, if you had to choose a breakfast cereal, what would it be? And added those to my shopping list:bigsmile: Now it turns out that one of the ladies is pre-diabetic too.
They have both been at the lake often to know that I can really only be counted on for one decent meal a day plus easy stuff they can put together themselves for lunch from the fridge or fruit bowl. Other stuff they can (and do) just bring themselves :blushing:
Have a lot of stuff going on here at home, so I've not been as active on MFP (or in my walking) as I should be - am headed for food shopping today so I'll try to get some walking in there. Have fun today everyone!0 -
Oh, and Reba - try adding 1/2 cup of frozen berries (and no other flavoring) to your blended shake. It's YUMMY!0

You are trying to be such a nice host. I would just ask them what they usually eat for breakfast and then go to the store and buy it! When my husband and I visit my daughter, we take my ingredients for a protein smoothy (which I eat every day) and steel cut oats with blueberries, slivered almonds, raisins and almond milk for my husband. We just fix our own breakfast and that way we start our day with one healthy meal. We cook the steel cut oats in a rice cooker and refrigerate it. He just takes out what he wants and warms it in the microwave everyday. Just an idea!0
