Pumpkin Muffins

Low carb Pumpkin muffins

2 cups almond flour
2 tsp cinnamon
1/2 tsp salt
1 tsp baking powder
1 tsp baking soda
1 cup Splenda


Then mix:
1 cup pumpkin (not pie filling)
3 eggs
1/2 cup oil
2 tsp vanilla extract

Mix dry into wet and pour into sprayed 9x13 inch pan. Bake 350 for 30-40 min

Makes 12 Muffins bake for aprox 15 min at 350

I put a few chopped almonds on top before baking. This is optional.
