Make me a keto mojito!

OK, not asking for alcoholic drink options really -- other than BPC, what's your favourite keto drink recipes?

I'm looking for some dessert-like yummy stuff to make me feel like I'm having a real treat some days.

I generally drink only water. But I did play around with a hot chocolate recipe which was delicious. Mmm.

the following two aren't drinks, but they are great for desserts!

    strawberry cheesecakes - keto style!

if you stick to this recipe, they are about 1g/carb each and about 9g/fat.

1/3 cup Walden Farms Strawberry Fruit Spread (you can sub real crushed strawberries, this will change your carbs)
    6 oz. Philadelphia Cream Cheese
    2 TBSP. butter
    2 TBSP. coconut oil
1/2 tsp. vanilla extract (you can sub lemon, strawberry, almond or any of your fav)

mix all ingredients in a food processor. spoon or scoop into tiny muffin papers. should make 12-14 bombs. freeze for about 15 minutes and enjoy. store tightly wrapped in freezer and bring almost to room temp to eat. (or eat frozen!)

    chocolate peanut butter fat bombs

    2 Tbsp. coconut oil
    2 Tbsp. butter (room temperature)
1/4 cup peanut butter (i used all natural, carbs/fat might change if you use another kind)
2 Tbsp. cream cheese (room temperature)
1 Tbsp. Torani sugar-free vanilla syrup (or vanilla extract)
1 Tbsp. cocoa powder (not dutched cocoa)
3 squares of Dove dark chocolate (you can sub another kind, but again, might change carbs/fat, etc.)

microwave all ingredients in a microwave-safe glass dish (i used my large measuring Pyrex so i could pour)

microwave for 30 seconds. stir. microwave an additional 30 seconds.

pour into molds (i used tiny muffin papers)

    makes 12 fat bombs

    2.1 g/carbs each
    7 g/fat each
  • Yummy yummy... mojitos actually gave me an idea...

What about mixing whipping cream with mint leaves, some lime juice, liquid spenda, ice/water for drink consistency.
