Nutrition/Health for Physical Job @ 300+ lbs?

Hi! My name is Lexi, I need some help. I just started what a thin person would consider a fairly physical job. At my weight, it's like boot camp. I have some questions.
1. I am having trouble figuring out exactly how many calories I burn per shift. Is there a way to determine the exact number I personally burn or should I keep guessing based on calorie burn counters I found online?
2. Whatever the exact number, I'm having a huge problem eating enough calories of healthy food. It's so bulky to eat that many calories of good food, especially without overdoing even natural fats and sugars (like from fruit and nuts). What healthy foods should I eat to up my calories? Should I overdo natural fat or natural sugar? Is there a healthy safe calorie paste or shake I could use as well if I'm stuffed but my body still needs fuel?
3. I've been drinking Gatorade at work. Is there a better liquid fuel I should be using?
4. I'm in so much pain. Are there any supplements or particular foods I can eat to reduce joint and muscle pain and inflammation? Also, what is the most effective non prescription pain killer you've found? Tylenol and aspirin and even Aleve are frankly doing just slightly better than nothing for me.
I need help especially with slowing my weight loss. I've lost 22 lbs in three weeks and my most recent drop was 6 lbs in 3 days. This is too fast but I can't eat that much... is it maybe ok to let that happen for a short time or is it really just not even ok for a short stretch? I'm just worried about my muscle loss and potential for loose skin.
