Is it normal for it to smell like cheese after a week or so in the fridge?

    It is probably going rancid. Do you have it kept in a butter crock or is it in the open air in the fridge?

    Sounds like it's going bad. The raw milk I buy only lasts about a week before turning.

    It was in a covered plastic container in the fridge.. I'll keep that in mind that is spoils fast or goes sour, I should say,and freeze it in smaller packages and only take out what I am going to use.I will look into the crocks

    Europeans prefer that the milk is soured a bit before the butter is churned, giving it a tart 'yogurty' note among all the buttery goodness (which is why American butter is called 'sweet'). It's possible that you are detecting this?

    yes it is.. It is from a local source here in the states.. it was old fashioned butter and not sweet cream butter.it was not bad tasting just different

    Oh, it'll turn eventually - but if you are a regular butter user you'll probably use it up beforehand. I stopped using my bell because my butter usage became so erratic that I could go a couple of weeks between uses. It was turning.


    PS - you can find them on eBay or Amazon quite reasonably priced.
